Directions 1.Mix the sauce ingredients together in a bowl and set aside

1. Preheat oven to 350°. Stir together mayonnaise, relish, hot sauce, salt and pepper in a small bowl; set aside

- 4 cups chopped yellow onions (2 large)
- 1/4 cup flour
- 1/4 teaspoon grated nutmeg
- 1 cup heavy cream
- 2 cups milk
- 3 pounds frozen chopped spinach, defrosted (5 (10-ounce) packages)
- 1 cup freshly grated Parmesan cheese
- 1 tablespoon kosher salt

Baked Brie with Caramelized Onions

In a very large skillet with a heavy bottom, melt the butter over medium-high heat
- 4 tablespoons (2 oz) unsalted butter
- 8 cups of sliced onions (about 4 large)
- 1 1/2 teaspoons salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon granulated sugar
- 1 tablespoon minced fresh thyme
- 4 garlic cloves, minced
- 1/2 cup dry white wine
- 1 8-inch diameter French Brie, about 32-36 oz
- crackers, baguette slices or crostini to serve
