Skewered Buffalo Chicken Tenders

Preheat oven to 350 degrees
- 1/2 cup all-purpose flour
- 1/2 cup plain bread crumbs
- Pinch of garlic powder
- Pinch of paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon coarsely ground black pepper
- 2 large eggs, lightly beaten
- 1 pound chicken tenders or 4 boneless skinless chicken breasts, cut into 1/2 inch strips
- Buffalo Hot Sauce
- 3/4 cup hot sauce
- 5 tablespoons unsalted butter
- 1 teaspoon minced garlic
- 1 to 2 cups bottled blue cheese dressing
- 3 celery stalks, cut into 3-inch pieces
Olive Oil Baked Shrimp

- 2 lbs Large Shrimp - peeled and deveined (tail-on for color and flavor)
- 3 tbsp. chopped garlic
- 1/2 cup extra virgin olive oil
- 4 tbsp. lemon juice
- 2 tsp.salt
- 1 tbsp. red pepper flakes
- 1/4 cup chopped fresh tomatoes
- 1/4 cup white wine
- 3 tbsp. chopped parsley
Creamy Parmesan Spinach with Toasted Bread Crumbs

saute bread crumbs in butter in a small skillet over medium heat until crisp
- For the Topping:
- 1/2 cup coarse fresh bread crumbs
- 1 tsp unsalted butter
- 1 Tbs chopped fresh parsley
- salt to taste
- For the Spinach:
- 1 tsp garlic, minced
- pinch red pepper flakes
- 1 tsp unsalted butter
- 1/2 cup heavy cream
- minced zest of 1 lemon
- salt to taste
- 1/2 cup parm cheese, grated
- 2 bags (6oz each) baby spinach (about 12 cups)

- 4 cloves of garlic, minced
- 3/4 c. brown sugar
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. Dijon Mustard

Snap off tough ends of asparagus
- 24 asparagus spears
- 3 tablespoons sour cream substitute (such as Tofutti Sour Supreme)
- 1 teaspoon chopped fresh dill
- 1 teaspoon chopped fresh tarragon
- 4 ounces sliced smoked salmon, cut into 24 (1/4-inch-wide) strips
- Dill sprigs (optional)
ROASTED CAULIFLOWER, TOMATO AND GOAT CHEESE CASSEROLE

Preheat oven to 450°F (230°C) and place a rack in the middle
- 1 medium-size head of cauliflower
- 3 tablespoons olive oil, divided
- 1 teaspoon fine grain sea salt
- 1/4 teaspoon ground pepper
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 teaspoon thyme
- 1 (14.5 oz / 411 gr) can diced tomatoes (I used Muir Glen Organic Tomato)
- 1/4 teaspoon ground coriander
- A pinch red pepper flakes
- A pinch of ground cinnamon
- 2 large free-range organic eggs (or 3 medium)
- 3/4 cup / 3 oz / 85 gr goat cheese, crumbled (Trader Joe’s sells crumbled goat cheese)

- 2 cups white tequila
- 2 cups Triple Sec
- 2 1/2 cups fresh pineapple juice

- 1/2 cup balsamic vinegar
- 2 tablespoons white wine or chicken broth
- 2 tablespoons Dijon mustard

- 5 garlic cloves, minced

- 8 salmon fillets (6 ounces each)
