Creamy Parmesan Spinach with Toasted Bread Crumbs

  • For the Topping:
  • 1/2 cup coarse fresh bread crumbs
  • 1 tsp unsalted butter
  • 1 Tbs chopped fresh parsley
  • salt to taste
  • For the Spinach:
  • 1 tsp garlic, minced
  • pinch red pepper flakes
  • 1 tsp unsalted butter
  • 1/2 cup heavy cream
  • minced zest of 1 lemon
  • salt to taste
  • 1/2 cup parm cheese, grated
  • 2 bags (6oz each) baby spinach (about 12 cups)



Step 1

saute bread crumbs in butter in a small skillet over medium heat until crisp. transfer to a bowl and add parsley and salt. saute butter in a saucepan over medium heat for 30 secs. Add cream, zest and salt; simmer for 5 mins. stir in cheese, reduce to low and keep warm.

heat 2 tbsp. water in a large saute pan over medium heat. add spinach, cover and cook just until wilted, about 1mins.
Transfer to a cutting board; blot dry with paper towels and chop coarsely. add spinach to the sauce, increase heat to medium and simmer 2-3 mins, stirring constantly. transfer to a serving bowl and top with crumbs.
