Cream of Fresh Tomato Soup

peel, seed and dice tomatoes; set aside
- Saute in 2tbsp unsalted butter:
- Peel Seed and Dice;
- 4 lb tomatoes ( 6 cups) divided
- 1 cup onion, diced
- 1/2 cup celery, diced
- 1/4 cup carrot, grated
- 1 tbsp. tomato paste
- 2 tsp garlic, chopped
- 1 tsp kosher salt
- 1/2 tsp red pepper flakes
- 2 sprigs fresh thyme
- Stir in:
- 4 cups prepared tomatoes
- Add, simmer puree:
- 3 cups chicken or vege broth
- 3 tbsp. fresh lemon juice
- 1 tbsp. sugar
- stir in; simmer:
- 2 cups prepared tomatoes
- Finish with:
- 2 tbsp. unsalted butter
- 1 cup half and half or whole milk
- garnish with:
- whipped heavy cream
- minced fresh parsley
- minced lemon zest
Southwestern Chicken Chili

Heat a Dutch oven over medium heat
- Cooking spray
- 1 cup chopped onion (1 medium)
- 1 cup diced green bell pepper (about 1)
- 2 garlic cloves, minced
- 1 pound skinless, boneless chicken breasts, cut into 1/2-inch cubes
- 1/4 cup chopped fresh cilantro
- 1/4 cup strong brewed coffee
- 1 tablespoon chili powder
- 1 teaspoon brown sugar
- 1/2 teaspoon ground red pepper
- 2 (15-ounce) cans kidney beans, rinsed and drained
- 1 (28-ounce) can diced tomatoes, undrained
- 1 tablespoon masa harina or finely ground cornmeal
- 3 tablespoons water
- Chopped fresh cilantro (optional)

- 2 large garlic cloves, crushed with side of large heavy knife
- pinch of dried hot red pepper flakes
- 1/4 cup olive oil
- 1 1/4 tsp salt
- 4 fresh basil leaves, torn into bits
Warm Apple Pie Bread with Cinnamon

1.Preheat oven to 350 degrees
- 1/2 tablespoon ground cinnamon
- 1/3 cup white sugar
- 2/3 cup brown sugar, divided
- 1/4 cup butter, softened
- 1/4 cup applesauce (note: you can use 1/2 cup butter and skip the applesauce if you prefer)
- 2 eggs, well beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/3 cup milk
- 1 large or 2 small apples, peeled and chopped
- 1 tablespoon butter, melted
Marinara Sauce

tie all herb sprigs and bay leaf together with kitchen twine, set aside
- 4 large fresh basil sprigs
- 4 large fresh parsley sprigs
- 1 large fresh rosemary sprig
- 1 large fresh sage sprig
- 1 bay leaf
- 1/2 cup extra virgin olive oil
- 1 small onion, chopped
- 8 garlic cloves, chopped
- 4 anchovy fillets, chopped
- 1 tbsp. tomato paste
- 1/4 cup water
- 1 tsp dried crushed red pepper flakes
- 1 cup dry red wine
- 4 28oz cans whole peeled plum tomatoes with juice
- 1 large parmesan cheese rind (about 4x2x1/2")
Taco Pasta Bake

boil pasta until just cooked, brown ground beef drain, mix taco seasoning 1 cup water w/ ground beef for 5 min, add
- 3/4 bag ziti noodles
- 1 lb of ground beef
- 1 pkg taco seasoning
- 1 cup water
- 1/2 pkg cream cheese
- 1 1/2 cup shredded cheese
Cinnamon Roll Casserole

Directions: Heat oven to 375°F
- Garnish:
- 2 tablespoons of melted butter or baking spray
- 2 cans (12.4 oz each) Pillsbury® refrigerated cinnamon rolls with icing
- 4 eggs
- 1/2 cup heavy whipping cream
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla
- 1 cup chopped Pecans
- 1/4 cup maple syrup
- Icing from cinnamon rolls
- Maple syrup (if desired) --I found it was sweet enough without it.
Italian Sausage and Peppers

Add vegetable oil to a large pan and heat over medium-high heat
- 2 tablespoons Vegetable oil
- 1 package Johnsonville Naturals Mild Italian Sausage
- 1 green pepper, thinly sliced
- 1 red pepper, thinly sliced
- 2 sweet onions, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 (14.5-ounce) can diced tomatoes
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Peach Poppyseed Vinegarette

- 3 tbsp peach preserves
- 2 tbps plus 2 tsp of apple cider vinegar
