Peppered Pork Chops with Vegetable Fricassee

Preheat the oven to 400°
- Four 10-ounce pork rib chops (1 inch thick)
- Kosher salt
- 2 tablespoons plus 2 teaspoons Dijon mustard
- Coarsely and finely ground black pepper
- 6 tablespoons extra-virgin olive oil
- 1/2 cup finely chopped shallots
- 2 tablespoons red wine vinegar
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1 1/2 tablespoons finely chopped flat-leaf parsley
- 1/2 pound sugar snap peas
- 1/4 pound white mushrooms, thickly sliced
- 4 scallions, white and tender green parts, thinly sliced
- 1/2 cup frozen baby peas, thawed
Loaded Veggie Grilled Cheese

First make the simple guacamole
- This is what I used for one sandwich. Double, triple, etc. as needed
- 2 pieces of bread
- 1/2 of an avocado
- 1/2 of a lime
- 2 slices of your favorite cheese (I used white cheddar)
- 2 large tomato slices
- 1 small onion
- 1 large handful of fresh spinach
- 1 medium portobello mushroom
- Olive oil
- White wine
- Balsamic Vinegar
- Salt and pepper
- Butter

- 1 tablespoon Worcestershire sauce freshly ground black pepper
- 1 tablespoon crushed red pepper
