- to perfect potato salad truly does exist, and it's incredibly easy to make!
- INGREDIENTS
- POTATO SALAD
- 1 1/2 1 1/2 4ths lbs petite (or baby) red or white potatoes, cut into 4ths
- 2 1/2 2 1/2 1/2 tsp kosher salt, divided
- 2-3 2-3 2-3 Tbsp apple cider vinegar
- 12 12 package 12 oz package of bacon, cooked and crumbled
- 3-4 3-4 3-4 hard-boiled eggs, peeled and coarsely chopped
- 1/2 1/2 to small to medium red onion, peeled and finely diced
- 1/4 1/4 1/4 cup finely diced celery (2-3 stalks)
- 1/4 1/4 1/4 cup finely chopped sweet pickles (or a few tablespoons of sweet pickle relish)
- DRESSING
- 3/4 3/4 3/4 cup mayonnaise
- 1 1 1 Tbsp whole-grain dijon mustard
- 2 2 2 Tbsp bacon grease (optional, but highly recommended)
- 2 2 2 tsp granulated sugar
- pinch pinch ground celery seed
- 1/4 1/4 1/4 tsp black pepper
Collards with Bacon and Onions

Cook bacon, remove from pan leaving 4 tablespoons of the bacon grease
- 1 pound bacon, reserve half for crunch topping
- 3 red onions, chopped very course
- 1 1/4 cup chicken stock
- 1/4 cup brown sugar
- 2 tablespoons cider vinegar
- 1/2 to 1 teaspoon red pepper flakes
- 2 –3 bunches of collards, wash, de-stem and chop or tear
- 1 –2 bunches of kale, wash, de-stem and chop or tear
Brown Sugar Pineapple Chicken

Whisk the Marinade/Glaze ingredients together in a medium bowl
- 2 pounds chicken tenderloins OR skinless chicken breasts, pounded thin
- 1/4 cup olive oil
- 2 teaspoons cornstarch
- Marinade/Glaze
- 1 cup pineapple juice
- 1/3 cup + 1 tablespoon) packed brown sugar
- 2 tablespoons lemon juice
- 2 tablespoons ketchup
- 2 tablespoons red wine vinegar
- 2 tablespoons low sodium soy sauce
- 1 tablespoon Dijon mustard
- 1-2 teaspoons Asian chili sauce (like Sambal Oelek)
- 1 tsp EACH salt, garlic pwdr, ginger pwdr
- 1/2 teaspoon onion powder
- Garnish (optional)
- chopped green onions
- lemon zest
- additional Asian chili sauce to taste
Zucchini Parmesan Crisps

Preheat oven to 400 degrees
- 1 lb. zucchini or squash (about 2 medium-sized)
- 1/4 cup shredded parmesan (heaping)
- 1/4 cup Panko breadcrumbs (heaping)
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- freshly ground pepper, to taste
Spicy Grilled Chicken over Sweet Peppers

To prepare chicken, combine the first 7 ingredients in a large zip-top plastic bag
- Chicken:
- 2 teaspoons chopped fresh thyme
- 2 teaspoons chopped fresh rosemary
- 2 teaspoons chopped fresh sage
- 1 teaspoon fennel seeds, coarsely crushed
- 1 teaspoon extravirgin olive oil
- 1/2 teaspoon crushed red pepper
- 4 garlic cloves, minced
- 6 (6-ounce) skinless, boneless chicken breast halves
- 3 tablespoons fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Cooking spray
- Peppers:
- 2 red bell peppers
- 2 yellow bell peppers
- 2 orange bell peppers
- 1 tablespoon chopped fresh basil
- 3 tablespoons fresh lemon juice
- 1 tablespoon extravirgin olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 garlic clove, thinly sliced
Creamy Ranch Hummus

- 4 1/2 cups canned garbanzo beans, drained and rinsed
- 1 3/4 cups buttermilk
- 1 cup chopped chives
- 1 1/2 tbsp dried dill
- 1/2 tbsp garlic powder
- 1/2 tbsp onion powder
- 1/4 cup finely grated parmesan cheese
- 1 tbsp salt
- juice of 1 lemon
- olive oil, for drizzling

- 6 cups sweet tea
- 1 bottle white wine
- 2 cups raspberries

- 1 pound uncooked linguine
- 1 tablespoon butter
- 3 tablespoons white wine
- 2 teaspoons grated Parmesan cheese
- 3 cloves garlic, minced

- 1 pinch salt and pepper to taste
- 1 pound medium shrimp, peeled and deveined
