Brussels Sprouts Braised with Bacon and Hard Apple Cider

Ingredients

  • 3 strips bacon, cut crosswise into 1/2 inch strips
  • 2 Tbsp butter
  • 1 1/2 lb brussels sprouts, trimmed and halved
  • 2 large shallots, roughly chopped
  • 1 cup hard apple cider
  • 1 tsp honey
  • 1 tsp kosher salt
  • fresh ground pepper to taste

Step 1

1. Heat a large cast iron skillet over medium high heat. Add bacon and cook, stirring when needed, until brown and crisp. Remove with tongs or slotted spoon and drain on paper towels.
2. Keep 1 Tbsp of bacon fat in the skillet, remove the rest and save for later use. Add the butter to the skillet. When the butter has melted, stir and add the brussels sprouts. Cook for 5 minutes shaking the skillet gently from time to time.
3. Stir in the shallots and cook for 2-3 minutes. Add the hard apple cider, the honey, salt and pepper. Gently mix and bring to a boil.
4. Reduce the heat to simmer and cook until the brussels sprouts are tender and the liquid has evaporated, 5-7 minutes. If the sprouts need more cooking time, add a little more cider.
5. Toss brussels sprouts with the bacon and serve immediately.
