Ranch Dressing

Mix all of the ingredients in a bowl
- 1/2 cup dried buttermilk
- 3 Tbsp dried parsley
- 1 Tbsp dry chives
- 1 Tbsp garlic powder
- 1 Tbsp onion powder
- 1 Tbsp dried chopped onion
- 2 tsp dry dill
- 2 tsp salt
- 2 tsp pepper
- Mix all ingredients with either; 1/2 cup mayonnaise and 1/2 cup milk
- OR. 1/2 cup greek yogurt and 1/2 cup milk
- OR you can sub sour cream OR any similar item
- Try different combinations to find which you like best for flavor and consistency
Nougat Candy

This classic nougat recipe yields 2 pounds of candy
- 2 cups sugar
- 1 cup corn syrup
- 1/2 cup honey
- 2 egg whites
- 1 tsp vanilla
- 1/2 cup unsalted butter, softened
- 1/3 cup almonds, unbleached and toasted
- 1/2 cup glace cherries (not imitation)
- 1/4 cup water
- 1/4 tsp salt
- you can substitute pistachios for the almonds, if you like
Apple Fritters

This is an old family recipe that has been passed down by my favorite great Aunt Jean
- Batter #1:
- Apples, peeled cored and sliced
- 1 1/3 cup flour
- 1 tbsp sugar
- 1/4 tsp salt
- 1/2 tsp grated lemon rind
- 1 egg, separated, room temperature
- 2 tbsp melted butter
- 1 cup dry white wine
- Batter #2:
- 1 1/3 cup flour
- 2 tbsp sugar
- 1 tsp salt
- 2 eggs beaten, room temperature
- 3/4 cup beer
- 2 egg whites stiffly beaten

Makes 1 pound
- 2 1/2 cups sugar
- 1/2 cup light corn syrup
- 3/4 cup water
- 1 egg white + a pinch of salt
- 1 tsp vanilla
- 1 cup walnuts
Pot Roast

1. Preheat the oven to 350 degrees F 2
- One 4 pound boneless chuck roast
- Kosher salt and cracked black pepper
- 2 Tbsp vegetable or olive oil, plus more if needed
- 2 carrots, chopped
- 2 celery ribs, chopped
- 1 yellow onion, chopped
- 1 bundle of various fresh herbs, such as tarragon, rosemary, parsley, thyme, etc, tied with twine
- 4 cloves garlic, chopped
- 1 cup dry red wine (cabernet) OR use red cooking wine
- 2 1/2 cups low sodium beef broth
Carbonara Pasta

The secret to true, delicious carbonara is Eggs
- 3/4 cup pancetta, 1/4 inch diced
- 2 Tbsp olive oil
- Salt
- 1 lb pasta, your choice
- 8 large eggs
- 1/2 cup parmesan cheese, grated
- 1/2 cup pecorino romano cheese, grated
- Pepper
- 4 scallions, cut on severe bias
Pico de Gallo salsa

In a large bowl, combine all of the ingredients and then refrigerate for at least one hour
- 4-6 plum tomatoes OR tomatoes "on the vine", deseeded and diced
- 1 small white onion, finely chopped
- 1/2 cup cilantro, roughly chopped
- 3 jalapeño peppers, seeded and finely chopped
- 1-2 Tbsp lime juice (start with 1 Tbsp and then to taste)
- salt, to taste
Apple Cake - Torta Rustica di Mele

This is the recipe of Gabriele Corcos, of Extra Virgin, on the Cooking Channel
- 1 stick unsalted butter, melted and cooled, plus more for greasing
- 4 apples, mix of granny smith and honey crisp (or fuji), cored, peeled and cut into chunks
- 1 large lemon, zested and juiced
- 1 cup all purpose flour
- 1 tsp baking powder
- pinch kosher salt
- 2 large eggs
- 1 cup sugar, plus extra to put on apples
- 1 tsp vanilla
- Bake in a 10 inch springform pan, greased with butter
Pecan Pie - (Silver Palate)

- 4 eggs
- 1 cup dark brown sugar
- 3/4 cup light corn syrup
- 1/2 tsp salt
- 1/4 cup melted sweet butter (1/2 stick)
- 1 tsp vanilla extract
- 2 cups shelled pecans, chopped
- 9 inch unbaked piecrust
- 1/3 cup shelled pecan halves
Squash and Bean Salad

The amounts in the ingredient list are for a Large Salad for a get together
- For the dressing:
- 1 lb adzuki beans (cooked overnight in a slow cooker)
- 1 lb black eyed peas, cooked to direction
- 1 butternut squash, roasted, deseeded and cubed
- 1 kabocha squash, roasted, deseeded and cubed
- 1 jar of peppadew peppers or roasted peppers, chopped well
- 1 medium red onion, diced
- 3-4 stalks of celery, sliced thin
- 3 carrots, chopped
- 1 cup of daikon, diced fine
- 1 1/2 cup of celery leaf, chopped fine
- 1 cup of italian parsley, chopped fine
- salt and fresh ground pepper, to taste
- 1/2 cup extra virgin olive oil
- 1/3 cup apple cider vinegar or more to taste
- Juice of 1-2 lemons, to taste
