Ancho and Morita Salsa

1. In a saucepan, heat 2 cups of water over medium heat and bring to the boil
- 2 Morita chiles, destalked, deveined, deseeded and roasted
- 1 Ancho chile, destalked, deveined, deseeded and roasted
- 1 clove garlic, peeled
- 1 1/4 tsp salt
- 17 oz tomatillos, dehusked and roasted well
Glazed Lemon Cake - (Silver Palate)

1. Preheat oven to 325 degrees
- Lemon Icing, recipe follows:
- 1/2 pound (2 sticks) sweet butter, softened
- 2 cups granulated sugar
- 3 eggs
- 3 cups unbleached, all purpose flour, sifted
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 2 tightly packed tablespoons grated lemon zest
- 2 Tbsp fresh lemon juice
- 1 lb confectioner's sugar
- 8 Tbsp (1 stick) sweet butter, softened
- 3 tightly packed Tbsp grated lemon zest
- 1/2 cup fresh lemon juice
Green Herb Dipping Sauce

From The Silver Palate shop, from Manhattan, in the late 70's
- 1/2 bunch Italian parsley
- 1/2 bunch fresh dill
- 1/2 bunch of watercress
- 3/4 cup drained, cooked fresh spinach, all liquid squeezed out
- 2 scallions, including the greens, sliced thin
- 2 cups homemade mayonnaise
- 1 cup sour cream
- salt and fresh ground black pepper to taste
Quinoa Pasta

Place flour in a mound and create a "hole" in the center
- 1 medium egg, room temp
- 3/4 cup quinoa flour
- 2 Tbsp arrowroot or tapioca flour
Hungarian Goulash

1. In a large Dutch oven, cook the bacon over moderate heat until crisp, about 7 minutes
- 6 oz thinly sliced bacon, chopped
- 2 1/2 lb well-marbled boneless beef chuck, cut into 1 1/2 inch pieces
- kosher salt and pepper
- 2 onions, chopped
- 1/4 cup Hungarian sweet paprika
- 1 Tbsp tomato paste
- 1/2 tsp caraway seeds
- 2 Tbsp apple cider vinegar, divided
- 1 1/2 lb small yukon gold potatoes, cut into 1-inch pieces
- 1 green bell pepper, chopped
- 2 tsp fish sauce, optional
- Sour cream and toasted rye bread, for serving

This recipe is from the Lebanese cookbook, Alice's Kitchen
- Filling:
- 10 small lebanese squash (you can sub zucchini or yellow crookneck)..if you make more than 10 squash, adjust the filling recipe
- 1/2 cup rice
- 1/2 tsp cinnamon
- 4 whole allspice kernels, ground (3/4 tsp)
- 1/2 tsp salt and pepper
- 1/4 tsp cayenne pepper
- 1 Tbsp lemon juice
- 2 cups lamb, finely chopped or coarsely ground
- 1 small can tomato sauce, divided
- For the Pot:
- several lamb bones, parboiled and rinsed (optional)
- 1 clove garlic
- reserved tomato sauce
- 1 large can whole tomatoes, coarsely chopped with liquid
- 2 Tbsp lemon juice
- 4 whole peppercorns
- 3 cups water
Carmelized Cauliflower

Preheat the oven to 425 degrees F 1
- 2 Tbsp pine nuts
- 3 Tbsp olive or avocado oil
- 1 head cauliflower, about 1 3/4 lb, trimmed and cut into florets
- pinch of kosher salt
- 1 tsp chopped garlic
- 1 tsp finely chopped shallot
- 1 tsp chopped fresh chives
- 1 tsp grated lemon zest
- 1 1/2 limes, cut into halves
- 1/2 tsp red pepper flakes
- 2 Tbsp chopped fresh basil
- 3 Tbsp chopped fresh cilantro
- 3 Tbsp chopped fresh mint
- 3 Tbsp plain yogurt
- 1/2 tsp honey
- 1/4 tsp ground sumac
- 1/4 tsp flaky sea salt
Chicken Pot Pie

This recipe is delicious! The directions are for 1 9inch pot pie
- 1 lb chicken, boneles, skinless - cubed
- 1 cup sliced carrots
- 1 cup frozen peas
- 1/2 cup sliced celery
- 1/3 cup butter
- 1/3 cup onion, chopped
- 1/3 cup all purpose flour
- 1 1/3 cup whole milk
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp celery seed
- 3 1/2 cups chicken broth plus extra broth/stock
- 2 9 inch unbaked pie crusts
Vinaigrette - (Silver Palate)

- 4 Tbsp red wine vinegar
- 1 Tsp granulated sugar
- 1/2 tsp salt
- 1/2 tsp fresh ground pepper
- minced parsley and/or snipped fresh chives, to taste
- 1/2 cup olive oil
Hazelnut-Chocolate Spread

This is a much HEALTHIER version of Nutella
- 1 stick unsalted butter, softened
- 1 cup hazelnuts
- 7 oz bittersweet chocolate, chopped
- 2 oz unsweetened chocolate, chopped
- 1 can sweetened condensed milk
- pinch of salt
- 1 Tbsp boiling water
