  • 10 whole graham crackers (5 oz.) ground fine
  • 1/3 c. butter, melted
  • 1 lb. cream cheese, softened
  • 1/2 c. sugar
  • 1 t. vanilla
  • 2 eggs
  • 10 oz. semisweet chocolate, melted

Step 1

Heat oven to 350. Brush inside of pan with melted butter and chill. Add remaining butter to graham cracker crumbs. Stir until all crumbs are moistened. Press crumb mixture evenly over bottom of pan and up side approx. 1". Chill until firm, 30-60 minutes. Beat cream cheese until smooth, 2-3 minutes. Add sugar and vanilla and beat until smooth. Stir in metled chocolate. Pour filling onto crust and bake 40-50 minutes, until sides are set but center is soft. Turn off oven and leave cake inside until cool. Refrigerate 4 hous before serving. Garnish as desired.
If recipe is used in larger pan, shorten cooking time, as cheese cake will not be as thick.
