Dar's Veggie/Bean/Pasta Stew

Dar always said that no one would even notice that this dish is meatless! Delicious! I miss you Dar!

Ingredients
- 2 T. olive oil
- 4 garlic cloves, minced
- 1 medium onion, peeled and chopped
- 6 c. vegetable stock
- 1 28 oz. can chopped tomatoes
- 1/2 c. tomato paste
- 2 medium carrots, peeled and diced
- 2 large stalks of celery, sliced
- 1 c. thinkly sliced Savoy cabbage
- 1/4 c. chopped parsley
- 1 T. chopped fresh basil
- 1 bay leaf
- 1 15 oz. can small cannelloni or white beans
- 1 c. chickpeas
- 1 c.(dry)Fusilli pasta(or any similar pasta)
- Salt and freshly ground pepper to taste
- 3/4-1 c. greated Parmesan cheese
- Can add: few drops of truffle oil, black beans, extra garlic, spinach

Step 1
In a large stockpot, heat olive oil and saute garlic and onion until translucent. Add stock, tomatoes, tomato paste, carrots, celery, cabbage, parsley, basil and bay leaf and cook for 30-40 minutes until veggies are tender. Add beans, chickpeas and pasta and simmer for another 20 minutes. Season with salt and pepper. Serve with Parmesan cheese to sprinkle on top.
