Dar's Veggie/Bean/Pasta Stew

Ingredients

  • 2 T. olive oil
  • 4 garlic cloves, minced
  • 1 medium onion, peeled and chopped
  • 6 c. vegetable stock
  • 1 28 oz. can chopped tomatoes
  • 1/2 c. tomato paste
  • 2 medium carrots, peeled and diced
  • 2 large stalks of celery, sliced
  • 1 c. thinkly sliced Savoy cabbage
  • 1/4 c. chopped parsley
  • 1 T. chopped fresh basil
  • 1 bay leaf
  • 1 15 oz. can small cannelloni or white beans
  • 1 c. chickpeas
  • 1 c.(dry)Fusilli pasta(or any similar pasta)
  • Salt and freshly ground pepper to taste
  • 3/4-1 c. greated Parmesan cheese
  • Can add: few drops of truffle oil, black beans, extra garlic, spinach

Preparation

Step 1

In a large stockpot, heat olive oil and saute garlic and onion until translucent. Add stock, tomatoes, tomato paste, carrots, celery, cabbage, parsley, basil and bay leaf and cook for 30-40 minutes until veggies are tender. Add beans, chickpeas and pasta and simmer for another 20 minutes. Season with salt and pepper. Serve with Parmesan cheese to sprinkle on top.
