Simple Minestrone

- 1 T. olive oil, plus more for drizzling
- 1 medium onion, diced
- 1 large leek, white and pale green parts only, halved lengthwise, sliced crosswise 1/4 inch thick, adn washed well
- 1 medium carrot, sliced crosswise 1/4 inch thick
- 2 garlic cloves, minced
- 1 medium zucchini, quartered lengthwise and slice crosswise 1/2 inch thick
- 1/4 small head cabbage, halved lengthwise and shredded
- 1 T. chopped fresh rosemary or 1 t. dried
- 1 can(14.5 oz.)diced tomatoes
- Coarse salt and ground pepper
- 1 can(19 oz.)kidney beans, drained rinsed
- 4 oz. small elbow macraroni
- Grated Parmesan cheese, for garnish
Chicken Enchilada Pasta

1. Preheat oven to 350 degrees F
- 1 12 ounce package dried jumbo shell macaroni
- 3 3/4 cups chopped large green and/or red sweet peppers (3 large)
- 1 1/2 cups chopped red onions (3 medium)
- 1 fresh jalapeno chile pepper, seeded and chopped*
- 2 tablespoons vegetable oil
- 2 cups chopped cooked chicken
- 1 16 ounce can refried beans
- 1/2 1 1/4 ounce package taco seasoning mix (3 tablespoons)
- 2 10 ounce can enchilada sauce
- 1/4 teaspoon salt
- 2 cups shredded Mexican-style four-cheese blend (8 ounces)
- 1 cup sliced green onions
- 2 cups nacho-flavor tortilla chips, crushed
- Sour cream
Mom's Fudge

- 2 c. sugar
- 2 T. cocoa
- 1 1/2 c. whole milk
- 2 T. white Karo syrup
- 1/4 t. salt
- 1 T. butter
- 1 t. vanilla
- Chopped walnuts (optional)
French Onion Melt

- 1 tablespoon butter
- 2 small sweet onions, halved and thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon fresh or dried thyme leaves
- 2 teaspoons dry sherry
- 1 cup (4 ounces) shredded or sliced Jarlsberg, Gruyère or Swiss cheese

Creamy Cauliflower Gratin

- 1 large head cauliflower, cut into 1-inch florets
- 1 Tbs. salt, plus more, to taste
- 2 cups milk
- 2 Tbs. unsalted butter
- 2 Tbs. all-purpose flour
- 1 tsp. dry mustard
- 1/2 cup shredded white cheddar cheese
- 1/2 cup shredded Gouda cheese
- Freshly ground black pepper, to taste
- Pinch of cayenne pepper
- 3 Tbs. dried bread crumbs
Fresh Parmesan Ranch Roll-Ups

For each roll-up, spread 2 T
- 1/2 c. ranch dressing
- 4-8 inch whole wheat tortillas
- 1/4 c. grated Parmesan cheese
- 1/2 c. diced red onion
- 2 c. shredded lettuce
- 1 10 oz. can Valley Fresh Natural Chicken Breast, drained and shredded
Pineapple Upside-Down Cake

Have all the ingredients at room temperature
- 7 fresh or canned drained pineapple slices (1/4- inch slices)
- 6 Tbs. (3/4 stick) unsalted butter
- 1/2 cup plus 2 Tbs. firmly packed light brown sugar
- 1/2 cup granulated sugar
- 2 cups cake flour
- 1 1/8 tsp. baking powder
- 1 tsp. salt
- 3/4 cup milk
- 1 1/2 tsp. vanilla extract
- 1 1/2 Tbs. dark rum
- 6 Tbs. (3/4 stick) unsalted butter
- 1 1/2 cups granulated sugar
- 2 eggs
- 7 canned cherries in syrup, drained
Fettuccine Alfredo with Ham and Peas

- 1 1/2 cups fresh or frozen baby peas
- 2 tablespoons butter
- 2 shallots, finely chopped
- 1 cup whipping cream
- 2 cups chopped smoked ham or cooked ham

- 1/2 teaspoon coarsely ground black pepper
- 1/2 cup freshly grated Parmesan cheese, divided

Sausage Alfredo

- 1 pkg. Hillshire Farm Smoked Sausage
- 8 oz. pasta, cooked, drained
- 2 c. heavy cream
- 2 t. Cajun seasoning
- 1/2 c. grated Parmesan
- Optional: peas, tomatoes or any of your favorite vegetables.

- 10 oz. diced, cooked leftover pork roast
- 3 c. Chinese boiled rice or cooked rice, chilled
- 1/3 c. Sesame-Soy Vinaigrette
