Late-Summer-Vegetable Minestrone

Heat oil in a large pot over medium
- 1/4 cup extra-virgin olive oil
- 2 small onions, chopped (2 cups)
- 3 large cloves garlic, minced (2 tablespoons)
- 3 carrots, peeled and cut crosswise into 1/4-inch rounds, larger rounds halved (1 cup)
- 2 celery stalks, cut crosswise into 1/4-inch pieces (1 cup)
- 1 bunch red Swiss chard, leaves torn into small pieces (4 packed cups), stems cut crosswise into 1/2-inch pieces (1 1/2 cups)
- 8 ounces green beans, trimmed and cut into 1-inch pieces (2 cups)
- 4 medium ripe tomatoes, peeled (optional) and diced (2 cups)
- Coarse salt and freshly ground pepper
- 2 medium zucchini or yellow squashes, or a combination, cut into a 1/2-inch dice (3 cups)
- 1 Parmesan rind or 1/4 cup finely grated Parmesan, plus more, grated, for serving
- 1 can (15 ounces) butter beans, cannellini beans, or chickpeas, drained and rinsed
- Fresh basil leaves, torn if large, for serving (optional)
Thai Chicken and Noodle Salad

This salad has terrific texture, with crisp carrots and cucumber, tender noodles and crunchy peanuts
- Dressing:
- 1 1/4 lb. boneless, skinless chicken breasts, thinly sliced crosswise
- Spicy Asian Dressing(see below)
- Coarse salt
- 3 1/2 oz. Chinese rice noodles, broken in half if long
- 1 T. vegetable oil, such as safflower
- 2 carrots, sliced into ribbons with a vegetable peeler
- 1 English cucumber, halved lengthwise and thinly sliced crosswise
- 1/4 c. fresh basil, torn
- Optional garnishes: bean sprouts, chopped peanuts, fresh mint leaves, red-pepper flakes and sliced green onion greens
- 4 green onion whites, thinly sliced
- 2 cloves garlic, minced
- 1/2 c. soy sauce
- 1/4 c. rice vinegar
- 2 T. light-brown sugar
- 1 T. fresh lime juice
- 1/2 t. minced canned anchovy(may want to leave out if you don't care for them)
- 1/2 t. red-pepper flakes

This salad is ideal for parties and picnics
- Dressing:
- 1 medium head lettuce
- 1 lb. hamburger, browned, salted and peppered
- 8 oz. pkg. cheddar cheese
- 1 can kidney beans, drained
- 1 large onion, chopped
- 4 med. tomatoes, diced--thoroughly drained if you use canned tomatoes
- 1 pkg. taco chips, crushed slightly
- 1 pkg. taco seasoning
- 8 oz. (1 cup) thousand Island or French dressing
- 1/2 c. sugar
- 1 T. taco seasoning
- 1 T. taco sauce
Foolproof Salmon Baked with Olive Oil and Herbs

Heat the oven to 250 degrees
- 1/4 cup plus 2 tbsp. olive oil
- 1 1/4 pounds salmon fillet
- Sea salt and pepper
- 1 large shallot, roughly chopped (about 1/4 cup)
- 1/4 cup (loosely packed) dill fronds
- 1/4 cup (loosely packed) flat-leaf parsley or tarragon leaves
- 1 lemon, zested

- 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
- 1 2/3 cups all-purpose flour (spooned and leveled), plus more for pan
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 1/4 cups sugar
- 2 large eggs, room temperature
- 1 1/2 cups mashed overripe bananas (3 to 4)
- 2 tablespoons sour cream
- 1 teaspoon pure vanilla extract
- 6 ounces bittersweet chocolate, chopped
Chinese Noodles with Broccoli

Heat sesame oil in a heavy saucepan and add the garlic
- 2 t. sesame oil
- 2 garlic cloves, minced
- 2 T grated fresh ginger
- 1/2 c. chicken broth
- 3 T. hoisin sauce
- 1/2 pkg. chinese noodles, cooked according to pkg. directions
Mixed Berry Tart

The pastry dough is somewhat crumbly but will hold together with a little kneading
- For the pastry:
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/8 tsp. salt
- 8 Tbs. (1 stick) cold unsalted butter, cut into
- 1/2-inch pieces
- 1 egg yolk, beaten with 2 Tbs. heavy cream
- For the vanilla pastry cream:
- 3 Tbs. granulated sugar
- 1 Tbs. all-purpose flour
- 1 Tbs. cornstarch
- 2 egg yolks
- 2/3 cup milk
- 1/2 tsp. vanilla extract
- 4 cups mixed berries, such as blueberries,
- raspberries, strawberries and blackberries
- Confectioners’ sugar for dusting
Apple Strudel

Directions Preheat oven to 375 degrees
- 1/2 cup plus 1 tablespoon sugar
- 1 1/4 teaspoons ground cinnamon
- 1/2 teaspoon coarse salt
- 3 Granny Smith apples
- 1 tablespoon fresh lemon juice
- 1/2 cup chopped dried apricots
- 1/2 cup dried fine breadcrumbs
- 6 sheets phyllo dough (roughly 13 by 16 inches), thawed if frozen
- 1 stick unsalted butter, melted
- Lightly sweetened whipped cream, for serving
