Zesty Garlic Kabobs

Marinate chicken 30 minutes at room temperature or up to 24 hours in fridge
- Zesty Garlic Marinade:
- 1 1/2 lbs. boneless chicken breasts, cut into 1 1/2 inch pieces
- 1 each red and green bell pepper and sweet onion, cut into 1 1/2-inch pieces
- 8 oz. button mushrooms
- 1 recipe Zesty Garlic Marinade
- 1/2 c. roasted Garlic Flavored Crisco Savory Seasonings or simply add 1 t. roasted garlic from a jar to 1/2 c. vegetable oil
- 3 T. lemon juice
- 1 t. Dijon mustard
- 1/2 t. hot pepper sauce
- 1 t. salt
- 1 T. honey
- Whisk together til blended
Zucchini "Pasta" with Butternut Squash

In a sauté pan over medium-high heat, warm the olive oil
- 2 Tbs. olive oil
- 1 small butternut squash, peeled, seeded and cut into 1/2-inch (12-mm) dice
- Kosher salt and freshly ground black pepper, to taste
- 1 garlic clove, minced
- Pinch of red pepper flakes
- 2 large zucchini, trimmed and run through the fine grates of a spiralizer
- 1/3 cup (1 1/4 oz./40 g) finely grated Parmigiano-Reggiano, plus shaved cheese for garnish
- Lemon-thyme dipping oil for drizzling
Veggie Lo Mein

- 8 oz. whole grain spaghetti
- 10 oz. frozen chopped brocooli
- 1 / 1/2 c. frozen shelled edamame
- 2 c. shredded carrots
- 10 oz. baby spinach
- 2 T. toasted sesame oil
- 1 large onion
- 2 t. grated peeled fresh ginger
- 1/4 c. plus on 1 tsp. lower-sodium soy sauce
- 2 T. balsamic vinegar
- 4 large eggs, beaten
Gina's Red Carpet Cocktails

- 1 1/2 c. pomegranate juice, chilled

- 6 ounces orange juice
- 1 teaspoon Simple Syrup
- 1 1/4 ounces tequila
- 1 teaspoon grenadine
- 1 slice of lime

- 3/4 t. seasoned salt
- 2 1/4 t. Worchestershire sauce
- 4 c. of your favorite Chex brand cereals(Corn, Rice and/or Wheat)
- 1/2 c. mixed nuts
- 1/2 c. pretzels
Chickpea, Leek & Spinach Soup

In a 4-qt. pot heat oil over medium heat
- 2 tablespoons extra-virgin olive oil
- 2 medium leeks, white and light green parts only, thinly sliced, washed, and drained
- 2 15 ounce cans chickpeas (garbanzo beans), rinsed and drained
- 2 cloves garlic, thinly sliced
- 4 cups reduced-sodium chicken or vegetable stock or broth
- 1 cup water
- 1 lemon, juiced (3 tablespoons)
- 2 5 ounce packages baby spinach
- 1 tablespoon fresh thyme, chopped
- Freshly ground black pepper

- 6 tablespoons unsalted butter, room temperature, plus more for pans and brushing
- 1 cup grated Parmesan
- 1/2 cup finely chopped fresh flat-leaf parsley
- 1 tablespoon plus 1 teaspoon chopped fresh thyme
- 1 teaspoon finely grated lemon zest
- 1/2 teaspoon freshly ground pepper
