Ming Tsai’s Shiitake French Onion Soup Recipe

Preheat oven to 350°F. Heat a Dutch oven over medium-high heat
- For the Shiitake Chips:
- Ingredients
- 2 tablespoons butter
- 3 red onions, 1/2 inch slice
- 2 large leeks, whites only, halved, washed & cleaned, 1/4 slice
- I large yellow and 1 large white onion,1/2 inch slices
- 4 cloves garlic, sliced
- 1 tablespoon ginger, minced
- 4 shallots, sliced thin
- 3 cups chateau timberley wine
- 3 900 mil containers chicken broth
- 1 cup shiitake mushrooms, 1/4 inch dice
- 2 bay leaves
- 2 sprigs fresh thyme
- 2 tablespoons Wan Ja Shan soy sauce
- 6 cups grated gruyere cheese (long pieces)
- Kosher salt and freshly ground pepper, to taste
- 4 baguettes, sliced 1'' thick, toasted dry, in oven until golden brown
- 2 bunches chives, sliced thin for garnish
- Shiitake chips (recipe follows)
- 1 quart shiitake mushrooms, sliced 1/8" thin
- Kosher salt
Cool Strawberry Cream

Cooking Directions Line a 9x5-inch loaf pan with a double thickness of foil; set aside
- 2 pkg. (8 oz. ea.) cream cheese, softened
- 3/4 cup(s) sugar
- 1/2 cup(s) sour cream
- 3 cup(s) fresh strawberries, mashed
- 1 cup(s) whipped topping
- 1 pkg. (12 oz.) frozen unsweetened blueberries
- 1/3 cup(s) sugar

Oven Baked Ribs

Preheat your oven to 300 degrees
- 2 racks of pork baby back ribs
- 1 can tomato paste (156 mL)
- 1 cup orange juice
- 1 cup brown sugar
- 1/4 cup Dijon mustard
- 1/2 cup cider vinegar
- 1/4 cup Worcestershire sauce
- 1/4 cup soy sauce
- 1/4 cup chili powder
- Salt
Creamy Dijon-Dill Potato Salad

Directions Put the potatoes in a big pot with enough water to cover by 1-inch
- 3 pounds Yukon gold potatoes, peeled
- Kosher salt and freshly ground black pepper
- 2 stalks celery
- 1 cup mayonnaise
- 1 small red onion, finely chopped (about 1/2 cup)
- 1/4 cup tightly packed chopped fresh dill
- 1 to 2 tablespoons vinegar
- 1/2 lemon, juiced
- 1 tablespoon grainy or regular Dijon mustard
Chop Suey

Cut the pork (or other meat) across the grain into small, thin strips
- 2 tablespoons Vegetable oil
- 4 stalks celery; diagonally sliced
- 1 onion; thinly sliced
- 1/2 pound pork; or other meat
- 1 cup mushrooms; thinly sliced
- 1 green or red bell pepper; seeded and sliced thin
- 1 cup bean sprouts
- 1 cup Beef stock
- 1 tablespoon Cornstarch
- 2 tablespoons Soy sauce
- 2 large green onions; diagonally sliced
- salt; to taste
- black pepper; fresh ground, to taste
Cheesy Beer Batter Bread

HEAT oven to 375ºF. MIX first 4 ingredients in large bowl until blended
- 3 cups flour
- 1 Tbsp. Magic Baking Powder
- 3 Tbsp. sugar
- 1 tsp. salt
- 1 cup Kraft Old Cheddar Shredded Cheese
- 1 bottle (341 mL) beer, at room temperature
- 2 Tbsp. non-hydrogenated margarine, melted
Roast Chicken Wings

Preheat your oven to 350ºF and turn on your convection oven if you have one
- 12 chicken wings
- 2 tablespoons cornstarch
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 heaping tsp of your favourite herb or spice, like thyme, curry or chili powder
- 1 teaspoon pepper
Cowboy Stromboli

Directions Preheat the oven to 375 degrees F
- All-purpose flour, for rolling dough
- 1 (16-ounce) ball pizza dough
- 1 cup mushrooms, sliced
- 1 pound roast beef or prime rib, sliced
- 2 cups shredded mild cheese blend (recommended: provolone, mozzarella, and Parmesan)
- 1/2 pound cooked chicken breast, thinly sliced
- 1 tablespoon minced fresh parsley
- 1 tablespoon minced fresh thyme
- 1 cup tomato sauce
- 2 eggs, beaten for egg wash
Molten Buttered Rum Cakes

- 1 tablespoon graham cracker crumbs
- 1/2 cup butterscotch chips (3 oz)
- 1/3 cup butter or margarine
- 2 whole eggs
- 1 egg yolk
- 1/4 teaspoon rum extract
- 1/3 cup packed brown sugar
- 1/3 cup all-purpose flour
