PORK TENERLOIN WITH BLUEBERRIES

Heat oven to 400. Rub pork with chicken seasoning and ¼ tsp salt and pepper and place in roasting pan
- 1 1/4 lb pork tenderloin
- 2 tsp sodium free chicken grilling blend such as Mrs. Dash
- 1/2 tsp salt
- 1/2 tsp pepper
- 12 oz green beans
- 1 Tbsp olive oil
- 1 small onion chopped
- 1 1/2 cup frozen blueberries thawed
- 1/4 cup cider vinegar
- 1 tsp sugar
- 1/2 tsp dried thyme
MEAT LOAF SHEILA'S

Stir together eggs, milk, salt, pepper and bread
- 2 eggs beaten
- 2/3 cup milk
- 2 tsp salt
- 1/4 tsp pepper
- 2/3 cup shredded carrots
- 1 1/2 cup shredded cheese
- 2 lbs ground beef
- 3 slices bread cut into cubes
- 2/3 cup chopped onion

Lemon Veal Scaloppine

- olive oil
- 1 tablespoon butter
- 8 large fresh sage leaves
- 4 veal scallopini, well trimmed of any fat and sinew & flattened
- plain flour
- freshly ground salt
- fresh ground pepper
- 1/2 cup dry white wine
- 1 lemon, juice of
- 1/2 cup cream

Cook onion in a little butter, then add and melt the rest of the butter
- 1 chopped onion
- 1 lb butter
- 1 lb chicken livers
- 3 oz brandy
- 3/4 tsp salt
- 2 bay leaves
- a dash of pepper
- 1/4 tsp cloves
- 1/2 tsp thyme
- a dash of cayenne
- 1/2 tsp paprika
- 4 cloves of minced garlic
- 4 oz cream cheese
- 1 hard boiled egg
CHOCOLATE PATE WITH RASPBERRY SAUCE

- 1 cup butter at room temperature
- 2 cups unsweetened cocoa
- 6 oz high-quality bittersweet (plain) chocolate, broken into 1/2 inch pieces
- 1 cup heavy (double) cream
- 8 large egg yolks
- 3/4 cup sugar
- 1/4 cup Scotch whisky
- Raspberry sauce below
BBQ RIBS DRY RUBBED

In a mixing bowl, combine all the ingredients and mix with your hands or a fork, breaking up any lumps
- 1/4 cup brown sugar, firmly packed
- 1/8 cup sweet paprika (do not use regular paprika)
- 1/8 cup smoked paprika (do not use regular paprika)
- 2 tsp onion powder
- 2 tsp garlic powder (not garlic salt)
- 1/2 tsp dry mustard
- 1/4 tsp cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp red pepper flakes
- 1 Tbsp sea salt
- 1 Tbsp black pepper
