- 3 cups small broccoli florets
- 3 cups sliced red cabbage
- 1/2 cup canned low-salt chicken broth
- 3 Tbsp chopped fresh mint

Bring a large pot of water to a boil
- 4 ounces dry Chinese noodles
- 1 (14.5 ounce) can chicken broth
- 6 shiitake mushrooms, sliced
- 2 green onions, chopped
- 1 skinless, boneless chicken breast half

Roasted Lamb with Root Vegetables

Allow the leg of lamb to rest at room temperature for 1 hour before cooking
- 1 (6 pound) leg of lamb
- 5 cloves garlic, minced
- 2 teaspoons coarsely ground black pepper

- 1 bay leaf, crushed
- 1 tablespoon chopped fresh rosemary

- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons coarse salt, or as needed
- 8 carrots, peeled and trimmed
- 16 small potatoes, unpeeled
- 1 large beet, peeled and cut into wedges
- 1 yam, peeled and cut into wedges
- 8 baby turnips, peeled

- Ingredients:
- 1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
- 6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
- 6 Tbs chopped Chives
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 2 cups Colby Jack Cheese ( may use cheddar)
- 8 oz container sliced mushrooms (optional)
STUFFED BELL PEPPERS

Bring a large pot of water to a boil over high heat
- 4 bell peppers, any colour
- Salt
- 1 medium yellow onion, peeled and chopped
- 1 clove of garlic, peeled and chopped
- 1 lb of lean ground beef
- 1 1/2 cup of cooked rice
- 1 chop chopped tomatoes, fresh or canned (if using can, drain off excess liquid first)
- 1 Tbsp chopped fresh oregano or 1 tsp of dried oregano
- Fresh ground pepper4
- 1/2 cup ketchup
- 1/2 tsp of Worcestershire Sauce
- Dash of Tabasco Sauce

- 1 10 oz can tomato soup
