BEEF MACARONI

Cook bacon well, cut into small pieces
- 1/2 lb bacon
- 1/4 cup chopped green pepper ad or celery
- 1 small onion
- 3/4 lb ground beef
- 14 tsp salt
- 1/4 tsp pepper
- 2 cups shredded cheese
- 1 1/2 cups uncooked macaroni
- 1 10 oz can tomato soup
- 1 can water
BBQ Meatballs and sauce p. 45

Beef Meatballs or Beef and Port mixed Meatballs
- 1 clove garlic
- 3 tbsp butter
- 2 lbs ground beef (or 1 lb beef and 1 of pork)
- 2 beaten eggs
- 1 cup milk
- 2 cups fine bread crumbs
- 1 tsp salt
- 1/2 tsp mace and celery seed
- 1 tsp black pepper

- Sauce
- 1 tbsp butter
- 3/4 cup minced raw onion
- 1 cup ketchup
- 1 cup boiling water
- 1 OXO beef cube
- 1/2 cup molasses
- 1/4 cup brown sugar
- 2/3 cup vinegar
- 2 tsp dry mustard
- 1/2 tsp salt black pepper
- Sauce can be used for Beef ribs too. Just cook ribs till tender and pour on the sauce.
Chicago-Style Hot Dog

Bring a pot of water to a boil
- 1 all-beef hot dog
- 1 poppyseed hot dog bun
- 1 tablespoon yellow mustard
- 1 tablespoon sweet green pickle relish
- 1 tablespoon chopped onion
- 4 tomato wedges
- 1 dill pickle spear
- 2 sport peppers
- 1 dash celery salt

GREATEST SHRIMP IN THE WORLD
- 2.2 lbs fresh shrimp, peeled with the heads still intact. The hard work is removing the tails, good if this can be avoided????
- 4-5 garlic cloves. first time we had ths there was not enuf garlic, recipe calls for 3 cloves.
- 1 cup chopped parsley
- 1/4 cup olive oil

- For Batter:
- (6 servings
- 2 eggs
- 1 and 1/2 cup milk
- 3 Tablespoons water
- 1/2 cup sifted flour
- 2 pinches salt
- For Cottage Cheese Filling:
- 2 cups small curd cottage cheese
- 2 egg yolks
- 2 Tablespoons rich cream
- 2 Tablespoons sugar
- 1 pinch of salt
- 1 drop of vanilla extract
zuchinni au gratin

Scrub zucchini and cut off ends
- 8 medium zucchini (2 lb)
- Boiling salted water
- 1/4 cup finely chopped onion
- 1/4 cup butter
- 2 1/2 Tbsp flour
- 1 tsp salt
- 1/8 tsp nutmeg
- Dash of white pepper
- Dash of cayenne
- 1 1/2 cup milk
- 2 Tbsp grated Parmesan cheese
- 1 cup shredded natural Gruyere or Swiss Cheese
Lemon Loaf Cake

In a mixing bowl combine yellow cake mix and lemon gelatin
- 1 box of yellow cake mix
- 1 3.5ox pkg lemon gelatin
- 3/4 cup H2O
- 3/4 cup veg oil
- 4 lg eggs slightly beaten
- 1 1/2 sifted powdered sugar
- 1/4 cup fresh lemon juice
- 1/2 tspn grated lemon rind
CHARD AND LENTIL SOUP from Samuel

In a 6 qt pot, heat the olive oil, paprika, and cumin over low heat, stirring until aromatic, 2 to 4 minutes
- 1/4 cup olive oil
- 1 tsp sweet paprika
- 1 tsp ground cumin
- 1 or 2 medium bunches of scallions, trimmed, white parts cut into 1/4 inch pieces, enough green part cut similarly to fill 1/4 cup
- 1 lb lentils (green, brow, red) (Red are preferred)
- 5 1/2 cups chicken broth or vegetable soup
- 3-4 cloves of garlic minced
- 1 bunch of chard (red preferred but white or yellow stem work well too) stemmed and leaves roughly chopped
- 1 bunch cilantro, coarsely chopped
- Juice of 1 lemon
- Kosher or sea salt to taste (use no much because broth typically has a lot of salt)
- A small pinch of crushed red pepper flakes
- Fresh ground pepper to taste
