In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain

- 3 15oz cans black beans, rinsed and drained
- 43.5 oz. chicken broth
- 2 cans green chilies
- 3 tsp. garlic powder
- 4 1/2 tsp. southwest chpotle seasoning blend
- 4 1/2 C. cooked rice

- 3/4 C. almond flour or ground pecans
- 3 Tbs sugar

- 6- 8oz. pkg cream cheese
- 3 C. brown sugar
- 1/4 C. cornstarch
- 4 tsp vanilla
- 1/2 tsp salt
- 1/2 tsp pralines and cream flavor
- 8 large eggs
- 1 C. caramel sauce
- 1 C. Whipping cream
Meatball Soup

- 12 tablespoons olive oil
- 3 cup chopped yellow onion
- 1 1/2 cup chopped celery
- 12 cloves garlic, chopped
- 6 (28-ounce) can whole tomatoes, crushed with your hands, with their juice
- 12 tablespoons tomato paste
- 168 ounces (21 cups) reduced-sodium beef broth
- 1 1/2 teaspoon Emeril's Italian Essence or other dry Italian seasoning
- 3 teaspoon salt,
- 6 lbs. meatballs
- 3 cup ditalini or other small pasta shape for soups
- 12 tablespoons chopped fresh basil leaves

- 2 TBS soy sauce
- 3 bay leaves
- 2 tsp. each basil, oregano and parsley
- 1 tsp. salt
- 1 tsp. honey
- 1/2 tsp. each marjoram, thyme and rosemary
- dash pepper

- 6 large baking apples, peeled and cut into 1/2-inch slices

- 1/2 cup cold butter, cut into small pieces
- 2/3 cup quick cooking oats

- 1 Tbs. light rum
- 2 tsp. lime juice
- 1 tsp. finely shredded lime peel
