Voulas Offshore Cafe Stuffed Grape Leaves

In a large saute pan over medium-high heat, add the oil
- 2 tablespoons olive oil
- 1 pound ground beef
- 1/2 onion, finely diced
- 1/2 cup rice
- 2 cloves garlic, finely chopped
- 1/2 cup freshly chopped parsley leaves
- 1/4 cup freshly chopped dill
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon dried oregano
- 1 jar grape leaves
- Water
- 1/4 stick butter
- 3 cups chicken broth (we use water and chicken soup base to make a strong chicken flavor)
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water
- 2 egg whites, whipped to soft peak
- 1/4 cup lemon juice

For the frosting: Cook the bacon, over medium heat in a small skillet, until crisp
- 4 strips bacon, for garnish
- 12 ounces extra-sharp white Cheddar, grated
- 1/4 cup grated extra-sharp yellow Cheddar
- 1 (7-ounce) jar pimentos, drained and finely chopped
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 3/4 cup mayonnaise
- 1 tablespoon Neelys BBQ seasoning, recipe follows
- 4 chopped scallions, for garnish
- 1 cup self-rising cornmeal
- 1 cup self-rising flour
- 2 tablespoons sugar
- 2 eggs, lightly beaten
- 1 1/4 cups buttermilk
- 3 tablespoons melted butter, plus 1/4 tablespoon cold butter
- 1/2 cup finely chopped onion
- 1 teaspoon seeded and chopped jalapeno

- 7 ounces green chiles, drained and chopped
- 3/4 cup white sugar
- 1 1/3 cups paprika
- 3 3/4 tablespoons onion powder

1.Melt velveeta and rotel in a medium saucepan over low heat
- 1 1/2 lb. ground sirloin
- 1 lb. easy melt cheese (like Velveeta) cut into 1/2-inch cubes
- 10 oz Rotel Diced Tomatoes & Green Chilies, undrained
- 6 hamburger buns
- 6 pieces leaf lettuce
- 1 large tomato, cut into 6 slices

Preheat oven to 375 degrees
- FOR THE CRUST...
- 1 c flour
- 1 tsp sugar
- 1/4 tsp baking powder
- 1/4 tsp salt
- 4 Tbsp unsalted butter, cold, cut into 1/2 inch pieces
- 3 Tbsp sour cream
- STRAWBERRY FILLING
- 2 c fresh strawberries, sliced
- 1/4 c sugar
- 2 tsp very good aged balsamic vinegar (you can substitute fresh lemon juice)
- 1/2 tsp corn starch
- pinch of salt
- 1 egg white, slightly beaten
- 1-2 tsp unsalted butter for dotting tart
