- 1 egg, beaten
- 1 (1/4 ounce) package dry yeast
- 2 cups bread flour (you can use regular all purpose flour but bread flour makes them lighter)
- 1/2 cup brown sugar, packed
- 2 teaspoons ground cinnamon
- 2 tablespoons melted butter
- 1/4 cup butter
- 1/2 cup brown sugar, packed
- 2 tablespoons milk
- 1/4 teaspoon vanilla
- 1/4 teaspoon pumpkin pie spice
- 1 dash salt
- 3/4 cup sifted confectioners' sugar

- 4 ounces bulk hot Italian sausage
- 4 ounces bulk sweet Italian sausage
- 1 cup chopped yellow onion
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- Two 28-ounce cans crushed tomatoes
- 1 teaspoon granulated sugar
- 3 fresh bay leaves
- Kosher salt and freshly ground black pepper
- 4 tablespoons unsalted butter
- 2/3 cup chopped fresh basil
- 2 cups ricotta
- 3 cups shredded low-moisture mozzarella
