BLACK BEAN SWEET POTATO BURRITOS

Ingredients
- 1 can sweet potatoes (drain half the water and mash with a mixer)
- (I also add the same spices that are in the black beans to the sweet potatoes.)
- Shredded cheddar cheese
- 3/4 bag frozen corm or 1 can corn (thawed - drained)
- 1 can black beans, rinsed and drained
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- 1 teaspoon minced garlic
- 1 teaspoon yellow mustard
- 1/4 cup diced white onion
- 1/2 teaspoon cayenne pepper
- salt to taste
- flour tortillas
- waxed paper

Preparation
Step 1
Mix corn and beans with next 7 ingredients.
On flat tortilla, spread a thin layer of sweet potato mixture over tortilla; add 2 tablespoons black bean/corn mixture.
Wrap into roll and place in waxed paper sheets.
Freeze until ready to microwave.
Heat in microwave (while still wrapped in waxed paper) for 2-4 minutes. Turn over halfway through cook time.
