- 1/4 cup light brown sugar
- 1 tablespoon ground coriander
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground cumin
- 2 teaspoons ground cinnamon
- 1 boneless pork butt or shoulder, fat cap scored (about 5 pounds)
- SANDWICH BUILD:
- Sweet Chile Sauce, warmed, recipe follows
- Unsalted butter, softened, to toast rolls
- 4 soft potato rolls or sweet Hawaiian bread rolls
