Stuffed Pinata Cake

For the cake: Preheat the oven to 350 degrees F
- FROSTING:
- 1 cup sugar
- 2 teaspoons freshly squeezed lemon juice
- Pinch fine salt
- 6 large egg whites
- 4 sticks (1 pound) unsalted butter, cut into 1 1/2-inch chunks, at room temperature
- 5 cups sweetened shredded coconut
- FILLING AND DECORATION:
- Blue, orange, yellow, purple and pink food coloring
- 2 cups of your favorite small and soft candies (none in wrappers), such as gummies or candy-covered chocolates
- CAKE:
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature, plus more for greasing the pans
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon fine salt
- 1 cup whole milk, at room temperature
- 1 tablespoon pure vanilla extract
- 3 large eggs plus 1 large egg yolk, at room temperature
- 1 1/2 cups sugar
Lobster Ravioli

Cook shallots in olive oil on medium high heat
- FILLING
- olive oil
- 1-2 shallot, chopped
- 2 c cooked lobster meet, chopped roughly from 3 1 pound lobster (set aside 1/4 cup or so of lobster meat for sauce)
- 2 pinches of parsley
- 1/2 pound ricotta cheese
- 3-4 Tbsp parmigiano-reggiano, grated
- salt and pepper
- 6 pasta sheets (or make your own)
- PASTA DOUGH
- 1 c semolina flour
- 1 c all purpose flour
- 2 large eggs
- 1 Tbsp olive oil
- SAUCE
- olive oil
- shallots
- garlic
- handful of mushrooms (optional)
- 1/4 c lobster meat
- 1 c cream (warm in microwave to avoid curdling)
- 1/2 c tomato sauce
- a few basil leaves, chopped
- salt and pepper
