German Sauerkraut and Potato Balls

Place potatoes in a medium sized saucepan and cover with water; salt lightly
- 4 medium potatoes, peeled and diced
- 1 small onion, minced
- 1 (14 1/2 ounce) can sauerkraut, drained and squeezed dry
- 1 egg
- 1 ⁄2 teaspoon salt (to taste)
- 1 ⁄4 teaspoon black pepper (to taste)
- 1 ⁄4 teaspoon caraway seed
- 1 ⁄2 cup all-purpose flour
- 1 ⁄3 cup breadcrumbs
- additional egg
- additional flour
- additional breadcrumbs
Spaghetti Alla Carbonara

Chop onion into small pieces and brown in olive oil and butter
- 1 medium onion
- 3 Tablespoon olive oil
- 1 Tablespoon butter
- 8 slices bacon
- 1/2 c white wine
- 1 pound spaghetti
- 4 whole eggs
- 3/4 c parmesan cheese (more, if wish)
- to taste: salt and pepper
Madeleine Wreath with Sour Cherry Mousse

For the madeleines: Preheat the oven to 375 degrees F
- Nonstick cooking spray
- 2 cups flour, plus more for dusting
- 4 eggs
- 1 1/3 cups granulated sugar
- 1 1/2 teaspoons lemon zest
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 2 1/2 sticks (1 1/4 cups) butter, melted
- 1/2 teaspoon green gel food coloring, plus more if needed
- Two 8-ounce packages cream cheese, at room temperature

Pancetta and Porcini Potato Gratin

Soak the dried porcini mushrooms in water for 20 minutes
- 1 ounce dried porcini mushrooms
- 1/2 cup boiling water
- 1 tablespoon oil
- 6 ounces pancetta, diced
- 1 onion, sliced
- 2 cloves garlic, chopped
- 1 teaspoon thyme, chopped
- salt and pepper to taste
- 1 cup cream
- 1/2 cup milk
- 1 pinch nutmeg
- 2 pounds potatoes, sliced 1/8 inch thin (on a mandolin)
- 2 cups gruyere, grated
