Cream Cheese, Honey & Bacon Dip

Drizzle honey over the top of the cream cheese block
- 8 ounces cream cheese
- 1 ⁄8 cup honey, to taste
- 1 ⁄8 cup bacon bits, to taste
Garlic Parmesan Cheese Bombs

Preheat oven to 400 and grease a baking sheet
- 1 can refrigerated biscuits (like the ones by Pillsbury - I used their Texas-style biscuits)
- 3 mozzarella cheese sticks, cut into 4 pieces each (so you have 12 total)
- 4 tablespoons butter
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 tablespoon parmesan cheese
Caribbean Rum Cake

Preheat oven to 325 degrees
- 2 c cake flour (or 1 3/4 c. all purpose flour + 1/4 c. corn starch)
- 1 1/2 c granulated sugar
- 4 tsp baking powder
- 1 tsp salt
- 1/2 c butter, cut into bits (do not substitute)
- 3 Tbsp vegetable oil
- 1 pkg vanilla instant pudding mix (3.5 oz)
- 1/2 c milk
- 4 medium eggs
- 1/4 c dark rum
- 1/4 c vanilla rum (I used Cruzan)
- 1/2 c vegetable oil
- 1 tsp pure vanilla extract
- 1/2 c chopped walnuts (for bottom of pan, not in cake)
- RUM GLAZE
- 1/2 c butter (do not substitute)
- 1/4 c water
- 1 c granulated sugar
- 1/2 c vanilla rum (I used Cruzan)
30 MINUTE MEXICAN LASAGNA

1. Preheat oven to 425°F
- 1 lb lean ground beef
- olive oil, to drizzle in pan
- 1/2 small yellow onion, grated or finely chopped
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 Tbsp chili powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can black beans, rinsed and drained
- 1 1/2 cups frozen sweet corn
- 1 (4 oz) can fire roasted diced green chiles
- 1 (10 oz) can enchilada sauce
- 12 8” large flour tortillas
- 12 oz Mexican cheese blend
- 6 oz can sliced olives, drained
- 2 scallions, finely chopped
- 2 Tbsp chopped cilantro
Daisy Fiesta Casserole

Preheat the oven to 350 degrees
- 6 whole wheat tortillas
- 2 cups Daisy Brand Cottage Cheese
- 2 cups packed baby spinach
- 2 cans black beans, rinsed and drained
- 2 cups tomatillo sauce
- 1/2 cup shredded reduced fat Mexican cheese blend
