Cream Cheese-Coconut-Pecan Pound Cake

- 1 1/2 cups butter, softened
- 1 (8-ounce) package cream cheese, softened
- 3 cups sugar
- 6 large eggs
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup bourbon
- 1 1/2 teaspoons vanilla extract
- 1 cup chopped pecans, toasted
- 1/2 cup shredded coconut
- Powdered Sugar Glaze (optional)
- Sugared Rosemary (optional)
- Sugared Cranberries (optional)
Chicken Enchiladas

Directions Make the sauce: In a medium saucepan, warm oil over medium low heat
- 1 tablespoon canola oil
- 1 small onion finely chopped
- 1 garlic clove minced
- 1 jalapeño pepper finely chopped (remove seeds for milder flavor if desired)
- 1/4 teaspoon chili powder
- 1 (28-ounce) can whole peeled tomatoes in purée
- 1 teaspoon fresh lime juice
- Coarse salt and freshly ground pepper
- 8 (6-inch) corn tortillas
- 12 ounces shredded cooked chicken (skin removed)
- 12 ounces shredded Monterey Jack cheese (4 loosely packed cups)
- 2 tablespoons pickled jalapeños minced (optional)

- 2 c. whole wheat flour
- 1/2 tsp. dry yeast
