Sugared Pecans

Roast nuts in shallow pan for 15 min
- 2 1/2 Cups Pecan
- Halves (3/4 LB)
- 1 Egg White
- 1/8 tsp. Salt
- 1/2 cup Sugar
- 1/4 Stick Butter
Peanut Brittle

Bring sugar, syrup, water and salt to a hard boil until it has a VERY thin string from a spoon
- 2 C White Sugar
- 1 C Karo Syrup
- 1/2 C Water
- 2 C Raw Peanuts
- 2 Tsp Butter
- 1/8 Tsp Vanilla
- 1 tsp Baking Soda
- 1/8 tsp Salt
Chicken Salad (South Beach Phase 1)

In a medium bowl, combine the sour cream, scallions, celery, parsley, lemon peel and salt & pepper to taste
- 3/4 C Fat Free Sour cream
- 3 scallions, minced
- 1 stalk Celery, diced
- 1 Tbls. Parsley,
- finely chopped
- 1/2 tsp, Grated Lemon
- Peel
- Salt & Pepper
- 3 C. Cooked Shredded
- Chicken Breast
- 8 Large lettuce leaves
Spinach Dip

Blend really good. Serve with veges
- 1 Box Frozen Chopped Spinach
- 2 Tbls. tops of Green onions
- 1 Tbls. Parsley, chopped
- 1 Tbls. Chives, chopped
- 2 dashes of Garlic Powder
- 2 Cups of Mayo
- (I like 1 cup mayo
- and 1 cup sour cream)
Brandied Whipped Cream

Beat heavy cream till foamy
- 1 C Heavy Cream
- 2 Tbsp Sugar
- 1 Tbsp Brandy
Oriental Batter Fried Shrimp

Mix flour, salt and baking powder in a bowl
- 1 LB Shrimp, shelled
- and deveined
- 1 tea. Baking powder
- 1 cup Flour
- 1 Egg, beaten
- 1 1/2 tea. Salt
- 1/2 cup Beer
Lemon Bars (4 eggs)

Heat oven to 350º. CRUST: Mix Flour and powdered sugar; add the melted butter mix well
- CRUST:
- 2 C. Flour
- 1 C. Butter, melted
- 1/2 C. Powdered Sugar,
- sifted
- FILLING:
- 4 Eggs, well beaten
- 1 3/4 C. Sugar
- 4 Tbsp. Flour
- 1 tsp. Baking Powder
- 6 Tbsp. Lemon Juice
