Fire Poppers

Preheat oven to 350. In a small bowl, combine eggs, onion powder and garlic powder
- 2 eggs
- 1/2 teaspoon garlic powder
- 1/2 onion powder
- 1 pound chicken cutlets -- cut into bite-sized pieces
- cornflake crumbs
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup honey
- 1/3 cup hot sauce
Blackeyed Pea Salad

Combine salad ingredients
- 2 15 ounce cans black eyed peas
- 2 green onions -- chopped
- 1 apple -- cubed
- 1 stalk celery -- sliced
- 1 medium red bell pepper -- chopped
- VINAIGRETTE
- 3 Tablespoons lemon juice
- 2 Tablespoons red wine vinegar
- 2 teaspoons yellow mustard
- 1 1/2 teaspoons honey
- 2 teaspoons olive oil
- 1/8 teaspoon black pepper
Chicken Fingers

Cut chicken into strips about 1" wide
- 4 boneless skinless chicken breast
- 1 cup cornflake or bread crumbs
- 1/4 cup sesame seeds
- Salt -- to taste pepper, paprika
- 1/4 cup honey
- 2 teaspoons orange juice
- 1/4 cup ketchup or chili sauce
- VARIATION
- 3/4 cup cornmeal
- 3/4 cup seasoned bread crumbs
- 1/3 cup wheat germ -- optional
- 1/2 cup sesame seeds
- Salt -- to taste pepper, garlic powder, paprika, basil
Chocolate Cheesepie

Heat oven to 350. Beat cream cheese, sugar and vanilla in large bowl until well blended
- 11 ounces cream cheese -- softened
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup cocoa
- 2 eggs
- 1/2 cup whipping cream
- 1 graham cracker pie crust
Chicken with Tomato Brown Sugar Glaze

Preheat oven to 350. Place chicken skin side down in baking dish
- 1 chicken -- cut up
- 8 ounce can tomato sauce
- 3/4 cup plus 2T sweet red wine
- 1/2 cup brown sugar
- 4 cloves garlic -- minced
Wheat Berry Salad

Combine water and wheat berries in a medium saucepan, bring to a boil
- 3 cups water
- 1 cup uncooked wheat berries
- 1/2 cup minced shallots
- 1/4 cup cranberry juice
- 2 Tablespoons vegetable oil
- 3 Tablespoons raspberry vinegar
- 1 Tablespoon balsamic vinegar
- 2 teaspoons dijon mustard
- 1/2 teaspoon salt
- 1/2 cup dried cranberries
- 1/2 cup dried cherries
- 1/3 cup chopped scallion
- 1/3 cup slivered almonds -- toasted
- 1/4 cup dried currants
- 1/4 teaspoon black pepper
Sweet Potato Crunch

- 3 cups cooked sweet potato
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup margarine
- 3/4 cup sugar
- 1/2 bag marshmallows
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup nuts -- chopped
- 1/3 cup margarine

- 1/2 Tablespoon dijon mustard
- 1/2 Tablespoon stone ground mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon soy sauce
- 1 clove garlic -- crushed
- Salt and pepper -- to taste
- 1/4 cup brown sugar
- 2 Tablespoons lemon juice
- 1/2 cup apricot preserves
- 2 chickens -- cut up
- 1 15 ounce can apricots -- drained, cut in half
Casablanca Couscous

- 1 cup chopped onion
- 1 cup sliced carrots
- 1 cup sliced celery
- 1 cup sliced mushrooms
- 3 Tablespoons oil
- 1 1/2 cups garbanzo beans
- 1 1/2 cups tomato sauce
- 1/2 cup raisins
- 1 1/2 cups water
- 2 teaspoons curry powder
- 1/4 teaspoon cayenne powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 box couscous -- cooked
Chickpea Salad
