Mango Chicken Piccata

In a food processor, blend 1/4 of the mango with the Italian dressing until smooth
- 1 mango -- peeled and diced
- 1/2 cu[ Italian dressing
- 2 15 ounce cans black beans -- drained
- 1/2 cup chopped red onions
- 1 small green pepper -- chopped
- 1 small red pepper -- chopped
- Salt and pepper
Pistachio Cake

Mix cake ingredients and stir in walnuts
- 1 box yellow cake mix
- 4 eggs
- 1 cup club soda
- 1/2 cup oil
- 1 package pistachio pudding
- 1 cup chopped walnuts
- FROSTING
- 1 pint heavy cream
- 1 cup milk or soy milk
- 2 teaspoons confectioner's sugar
- 2 packages pistachio pudding
Zucchini and Tomatoes

- 1 teaspoon olive oil
- 4 cups sliced zucchini
- 1/2 cup chopped onions
- 1 clove garlic -- crushed
- 1 14.5 oz can whole tomatoes -- undrained, chopped
- 1 teaspoon chopped fresh oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

- 1 1/2 pounds cooked chicken (optional) -- cut into 1" cubes
- 1 pound pasta -- cooked and drained

- 1 teaspoon garlic salt
- 3 Tablespoons cornstarch
- 1/2 cup cold water
- 1 can mandarin orange -- drained
- 1/2 cup whole pitted olives

- 1 package chocolate pudding mix
- 3/4 cup chopped maraschino cherries with 7 T. juice -- divided
- 2 ounces cream cheese
- 1/2 cup powdered sugar
