Roasted Hearts of Palm Salad

Toss the hearts of palm with oregano, salt and pepper and oil
- 2 jars heats of palm
- 1 teaspoon oregano
- salt and pepper
- 1 1/2 Tablespoons olive oil
- 6 to 8 mini peppers -- sliced
- 2 containers grape tomatoes -- cut in half
- 1/2 red onion -- sliced thinly
- RED WINE VINAIGRETTE
- 2 Tablespoons red wine vinegar
- 2 teaspoons dark brown sugar
- 2 teaspoons dijon mustard
- 1/2 shallot -- diced finely
- 1 clove garlic -- chopped finely
- 1 cup olive oil
- salt and pepper
Salmon with Cranberry Horseradish Sauce

Combine ingredients and pour over two or three salmon fillets
- 1 8 ounce can cranberry sauce
- 2 to 3 Tablespoons horseradish or creamy horseradish
- 1 Tablespoon dijon mustard

- 2/3 cup margarine
- 1 3/4 cups sugar
- 2 eggs
- 1 1/2 teaspoons vanilla extract

- 1 teaspoon salt
- 1 1/4 cups milk

Cranberry Apple Relish

- 1 1/2 cups chopped peeled Granny Smith apples
- 1 cup packed brown sugar
- 1/2 cup white grape juice
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1 12 ounce package fresh cranberries
Rice Krispie Butterscotch Bars

Combine sugar and corn syrup in a large saucepan; bring just to a boil over medium heat, stirring constantly
- 1 cup granulate sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 6 cups Rice Krispies®
- 1 cup (6 oz.) chocolate chips
- 1 cup (6 oz.) butterscotch chips
Potato and Eggplant in Lentil Sauce

Boil 3 cups water in a large saucepan
- 1/2 cup yellow lentils
- 1/2 teaspoon turmeric -- divided
- 3 teaspoons oil -- divided
- 1/2 teaspoon cumin seeds
- 1/2 cup chopped onions
- 1/2 cup chopped tomatoes
- 1 large unpeeled potato -- cubed
- 1 eggplant -- cubed
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
Yellow Cake/Cupcakes

Preheat oven to 350. Grease two 9 inch pans
- 2 1/2 cups cake flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 sticks margarine -- softened
- 1 1/2 cups granulated sugar
- 5 large eggs -- at room temperature
- 1 cup milk
- 2 teaspoons vanilla
- Quick Vanilla Frosting
Meat Eggplant Casserole

Peel eggplant and slice. Reserve 1/2 cup of tomato sauce for the top
- 1 large eggplant
- 1 pound ground beef
- 1 teaspoon salt
- 1 Tablespoon oil
- allspice or pepper
- 1 8 ounce can tomato sauce
- 1/2 cup rice -- uncooked
- 1/4 cup water
Banana Cake 2

Preheat oven to 350. In a food processor (I use a mixer), blend the banana and sour cream until smooth
- 2 large ripe bananas
- 2 Tablespoons sour cream*
- 2 large eggs
- 2 teaspoons grated lemon zest
- 1 1/2 teaspoons vanilla
- 2 cups (200 g) sifted cake flour
- 3/4 cup + 2 T. (170 g) sugar
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 10 Tablespoons unsalted butter -- softened

- 1 cup firmly packed dark brown sugar
- 1 Tablespoon salt
- 1 3/4 cups old fashioned rolled oats
- 3 cups boiling water
- 2 Tablespoons butter or margarine
- 1 package dry yeast
- 1/4 cup warm water
- 6 cups flour
