Matzo Balls

Mix ingredients. Cover and refrigerate for at least 20 minutes
- 2 Tablespoons oil
- 2 eggs -- slightly beaten
- 1/2 cup matzo meal
- 3/4 teaspoon salt
- 2 Tablespoons soup or water
Mediterranean Barley Salad

Heat a large skillet over medium high heat
- 1 1/2 cups pearled barley
- 1/2 teaspoon oregano
- 1 English hothouse cucumber with skin
- 1 cup grape tomatoes -- sliced into 1/4" rounds
- 3/4 cup kalamata olives -- chopped
- 3/4 cup marinated artichoke heart
- 6 mint leaves -- chopped
- 3 tablespoons olive oil
- 1 teaspoon rice wine vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Potato Kugel Chicken

Slice the onions and place them on the bottom of the pan
- chicken, cut up in 8ths
- onions -- sliced
- chicken flavored potato flakes

No Bake Strawberry Cheesecake

Mix graham crackers, margarine and 1/4 cup sugar; press onto the bottom of a 13x9 inch pan
- 12 graham crackers -- finely crushed
- 6 Tablespoons margarine -- melted
- 1 cup plus 2 T. sugar -- divided
- 4 packages Neufchatel cheese -- softened
- 1/2 cup strawberry preserves
- 2 cups fresh strawberries -- chopped
- 1 tub (8 ounces) whipped topping
Asparagus Souffle

Mix all ingredients except margarine and cornflake crumbs
- 2 cans asparagus
- 1 1/2 Tablespoons flour
- 1 1/2 Tablespoons margarine -- melted
- 1/2 cup milk or water
- 1/2 package onion soup mix
- 3 eggs
- Pepper
- Cornflake crumbs
Indian Lentil Soup

In a large soup pot, heat oil over medium heat
- 2 Tablespoons olive oil
- 1 large celery stalk -- chopped
- 1 large carrot -- chopped
- 1 medium parsnip -- chopped
- 1 small shallot -- diced
- 1 large garlic clove -- minced
- 1 teaspoon grated fresh ginger
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon ground cumin
- 1/8 teaspoon crushed red pepper flakes
- 5 cups chicken broth
- 1 cup dried lentils
- salt and pepper
Tater Tot Casserole

Combine first six ingredients
- 1 can condensed cream of mushroom soup
- 1 can evaporated milk
- 1 cup sour cream
- 1/2 cup melted butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 32 ounce package tater tots
- 1 1/2 cups shredded cheddar cheese
Apricot Dijon Glazed Chicken

- 1/4 cup dijon mustard
- 2 Tablespoons apricot preserves -- melted
- 1/2 teaspoon ginger
- 1 pound chicken parts
Israeli Couscous with Roasted Vegetables

- 1 large chicken
- 2 Tablespoons oil
- 2 onions -- cut in rings
- 1/2 pound apricot preserves
- 3/4 cup mayonnaise
- 1/4 cup soy sauce
- 1/4 teaspoon white pepper
- 1/2 teaspoon salt
Sticky Red Potatoes

- 1/2 teaspoon chili powder
- 2 Tablespoons ketchup

- 2 Tablespoons oil
- 2 Tablespoons ketchup
- 4 teaspoons vinegar
- 2 cloves garlic -- crushed
- 3 Tablespoons honey
- 1/2 teaspoon chili powder
