Spinach and Bow Ties

Melt 1 tablespoon butter in saucepan over low heat
- 3 Tablespoons butter -- divided
- 2 small shallots -- minced
- 10 ounces frozen chopped spinach -- thawed and drained
- 1 cup heavy cream -- divided
- Salt and pepper -- to taste
- 8 ounces bow tie pasta -- cooked
- 1 cup Parmesan cheese

- 1 1/2 cups (6 1/4 ounces) unbleached flour
