Cranberry Couscous Salad

Heat olive oil in large soup pot
- 1 Tablespoon oil
- 2 8.8 ounce boxes Israelli couscous
- 4 cups boiling water
- 1/3 cup oil
- 1/4 cup apple cider vinegar
- 1 Tablespoon water
- 1 Tablespoon honey
- 1 Tablespoon orange juice
- 4 cloves garlic -- minced
- juice of 1/2 lemon
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon tarragon
- 1/2 cup craisins
- 3/4 cup coarsely chopped pecans
- 5 scallion -- thinly sliced
Chocolate Brownie Pie

Preheat oven to 375. In a 1-qt saucepan, melt margarine and chocolate over low heat
- 1 9" unbaked pie shell
- 2 Tablespoons margarine
- 2 ounces unsweetened baking chocolate
- 3 eggs
- 1/2 cup sugar
- 3/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 3/4 cup broken pecans
Cheesy Chicken Noodle Skillet

Cook the chicken strips while the noodles are boiling
- 1 package egg noodles
- 2 packages Morningstar "chicken" strips
- 20 ounces frozen chopped broccoli
- 1/2 cup chicken broth
- 4 ounces cream cheese
- 1/4 cup mayonnaise
- 1 package shredded cheddar cheese
Crispy Oven Baked Chicken

Grind onion and garlic in food processor until it makes a paste
- 2 chickens -- cut up
- 1/2 to 1 onion
- 3 cloves garlic
- Mexican seasoning
- 1 can ginger ale
- 1/3 cup oil
- Tortilla chips -- crushed
- Matzo meal
Chickpea, Carrot and Pepper Salad

Place carrots in medium saucepan; just barely cover with water
- SALAD
- 1 pound carrots -- thinly sliced
- 1 red pepper -- cut into 1" cubes
- 1 green pepper -- cut into 1" cubes
- 1 can garbanzo beans -- rinsed and drained
- DRESSING
- 1/3 cup apple cider vinegar
- 1/4 cup tomato sace
- 1/4 cup tomato paste
- 2 1/2 Tablespoons honey
- 2 Tablespoons olive oil
- 3 Tablespoons chopped fresh scallion or chives
- 1 teaspoon Worcestershire sauce
- 3/4 teaspoon Dijon mustard
- 1/4 teaspoon celery seeds
- 1/8 teaspoon ground allspice
- 1/8 teaspoon black pepper
- 1/8 teaspoon salt
Sheldon's Chicken

Saute peppers and mushrooms in olive oil
- 1 family pack chicken cutlets
- olive oil
- bread crumbs
- 1 green pepper -- chopped
- 1 yellow pepper -- chopped
- 1 red pepper -- chopped
- 1 box mushrooms -- sliced
- 1 cup ketchup
- 1 cup apricot preserves
Wine Marinated Brisket

In nonaluminum pot, mix together the marinade ingredients
- 1 cup dry red or white table wine
- 2 Tablespoons soy sauce
- 1 small onion -- peeled and grated
- 2 cloves garlic -- finely minced
- 1 3 to 3.5 pound brisket -- or roast
- 1 or 2 medium onions -- peeled, halved and thinly sliced
- 1 or 2 cups fresh mushrooms
Cabbage Salad II

Heat ingredients and pour over cabbage
- 1 head cabbage -- shredded
- Sunflower seeds
- 1/2 cup vinegar
- 1/4 cup oil
- 1/3 cup sugar
- 4 Tablespoons soy sauce
Fudgy Chocolate Frosting

Melt both chocolates in a double boiler
- 3 ounces unsweetened chocolate -- coarsely chopped
- 3 ounces bittersweet chocolate -- coarsely chopped
- 1 cup margarine or butter -- softened
- 2 cups confectioners sugar
- 1 Tablespoon vanilla extract
Creamy Two Cheese Potatoes Gratin

Preheat oven to 350. Place potato slices and garlic cloves in a saucepan, and cover with water
- 2 pounds peeled baking potatoes -- cut into 1/4" slices
- 6 cloves garlic -- chopped
- 1 cup hot Cheddar Cheese Sauce
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1/4 cup grated Parmesan cheese
