Hearty Portuguese Kale Soup

This is a very flavorful soup that is a comfort food for my family
- 1 tablespoon olive oil
- 1 lb chorizo sausage (fresh not dried)
- 1 quart chicken broth
- 1 large onion, roughly diced
- 4 large potatoes, cubed
- 1 bunch kale, stemmed washed & chopped (abt. 1 lb.)
- 1 1/2 cups ditalini
- 1 (15 ounce) can dark red kidney beans
- fresh ground black pepper
- salt (optional)
Easy Sugar Cookies

Preheat oven to 375 degrees F (190 degrees C)
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
Grilled Salmon & Asparagus Packets

Directions Heat gas grill on medium or charcoal grill until coals are ash white
- 1 pound fresh salmon fillet, quartered
- 2 Land O Lakes® Lemon Pepper Sauté Express® squares
- 8 ounces (10 to 16 spears) fresh asparagus, cut into thirds
- 1 small (about 1 cup) red bell pepper, cut into 2-inch strips
- 1/3 cup thinly sliced red onion

For the crust, combine the graham crackers, brown sugar and cinnamon
- 1 1/2 cup graham cracker crumbs
- 1/3 cup brown sugar
- 1/2 teaspoons ground cinnamon
- 16 ounces cream cheese
- 2 cans condensed milk (8 oz. cans)
- 1/3 cup lemon juice
- 1/2 cup sour cream

Best Half-Batch Chocolate Chip Cookies

These cookies are a great, soft, chocolatey small batch perfect for a small family
- 1 cup flour, plus
- 2 tablespoons flour
- 1/2 cup butter
- 1 large egg
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 6 tablespoons brown sugar, firmly packed
- 6 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- 3/4 cup white chocolate chips
- 3/4 cup milk chocolate chips
- 2 -3 tablespoons cocoa powder (optional)
Apple Turnovers Recipe

In a small bowl, combine flour and salt; cut in 1/2 cup butter until crumbly
- FILLING:
- 2 cup all-purpose flour
- 1 teaspoon salt
- 1 cup cold butter, divided
- 1/2 cup ice water
- 2/3 cup sugar
- 4 teaspoons cornstarch
- 1/4 teaspoon ground cinnamon
- 4 medium tart apples, peeled and thinly sliced
- 2 teaspoon lemon juice
- 4 tablespoons beaten egg
- 3 teaspoons water
- GLAZE:
- 1/2 cup confectioners' sugar
- 2 teaspoon water
Pina Colada Green Smoothie

The sweetness of the fruit (especially the bananas) hides the bitter flavor of the greens
- 1/2-1 cup of unsweetened coconut milk (I make my own!)
- 1/2-1 cup of water or other alternative milk
- 6 ice cubes
- 1-2 large leaves of kale, or 2 cups of spinach
- 1-2 TBSP of Chia seeds
- 1-2 TBSP of ground flax seeds
- 1 banana
- 1 cup of frozen fruit: I use pineapple and mango

Instructions: 1. Preheat oven to 325 degrees
- 3/4 cup (1 1/2 sticks) butter, softened
- 1/2 cup honey
- 1/3 cup (packed) brown sugar
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 4 1/2 cups rolled oats
- 1 cup (6 ounces) semi-sweet chocolate chips
Banana Breakfast Split

Directions Directions Place the bananas in a long bowl or plate
- 4 bananas, peeled and halved lengthwise
- 4 spoonfuls of Greek vanilla yogurt, or preferred flavor
- Fresh blueberries, strawberries, raspberries and/or blackberries, about 2 cups total
