Chocolate Treasure Cookies

Preheat oven to 350 degrees
- 1 1/2 cups graham cracker crumbs (about 25-30 squares)
- 1/2 cup flour
- 2 teaspoons baking powder
- 1 14 oz. can sweetened condensed milk
- 1/2 cup butter, room temperature
- 1 1/3 cups coconut
- 2 cups (1 package) semisweet chocolate chips
Red Berry Risotto Oatmeal

In a rice cooker add all the ingredients, except the fruit
- 1/2 cup steel-ground oatmeal (such as McCann's Irish Oatmeal)
- 1 cup Arborio rice
- 1/2 cup heavy cream
- 6 cups water
- 1 vanilla bean, scraped
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 bag frozen raspberries, thawed
- OR
- 1 cup ripe raspberries
- 1 cup ripe strawberries, quartered

1 Using a food processor, grind cookies to a fine powder
- 1 lb Oreo cookies (3 sleeves)
- 8 ounces cream cheese , room temperature
- 1/2 teaspoon vanilla extract (using different extracts allows for subtle flavour changes...I've used mint extract, upped to 1 tsp) (optional)
- 1 lb milk chocolate
- 1/2 lb white chocolate

While the rice is cooking, heat oil in a large skillet at medium high
- 1 * 1 tablespoon olive oil
- 4 * 4 boneless skinless chicken breast cut into bite-sized pieces
- 1 1/4 * 1 1/4 cup garden or chunky salsa (medium or mild, I used mild)
- 1/2 * 1/2 cup marmalade
- 1 1/2 * 1 1/2 Tablespoon brown sugar
- 3 * 3 Tablespoons fresh lime juice
- 1/4 * 1/4 teaspoon cinnamon
- 1/4 * 1/4 teaspoon cloves
- * cooked rice

Butter an 8x8 inch square baking dish
- Cake:
- 1 cup flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1 large egg
- 1 cup packed brown sugar
- 1/3 cup milk
- 2 tablespoons melted butter
- 1 teaspoons vanilla
- 2 cups chopped Granny Smith apples
- Boiling Mixture:
- 1 cup apple cider (apple juice can be substituted if apple cider can't be found)
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/2 cup brown sugar

- 1/4 cup flour
- 1/4 cup brown sugar
- 2 tablespoons cold butter
