- 8 ounces fresh mushrooms
- 2 tablespoons onions, chopped
- 1 -2 garlic clove, minced
- 2 tablespoons butter
- 2 -3 tablespoons flour (separated)
- 2 cups chicken broth
- 1 cup light cream or 1 cup evaporated milk
- 1 ⁄2 teaspoon salt

Peach Fried Pies With A Cinnamon Crust

Directions In a large saucepan, over medium heat, combine the sugar, peach slices, cloves, and nutmeg
- 1 cup sugar
- 4 cups fresh (or frozen and thawed) peach slices, peeled
- 4 whole cloves
- 1/4 teaspoon freshly grated nutmeg

- 1/4 cup cornstarch

Lighter sloppy joes
- 1.25 lbs 93% lean ground beef sirloin
- 1 tbsp steak seasoning or seasoned salt
- 1 carrot, minced
- 1 medium onion, minced
- 2 cloves garlic, minced
- 1/4 cup red bell pepper, minced
- 4 oz mushrooms, minced
- 1 tbsp red wine vinegar
- 1 tbsp Worcestershire sauce
- 2 cups tomato sauce (*NSA)
- 2 tbsp tomato paste (*NSA)
- Great Value 80 calorie hamburger buns
- NSA = no salt added - I used this instead so it cut down on sodium

- For each Basic Potato Egg Basket, start with:
- 1/4 cup refrigerated shredded hash brown potatoes (such as Simply Potatoes)
- For each Carrot-Potato Egg Basket, start with:
- 2 tablespoons refrigerated shredded hash brown potatoes (such as Simply Potatoes)
- 2 tablespoons shredded carrot
- For each Zucchini-Herb-Potato Egg Basket, start with:
- 2 tablespoons refrigerated shredded hash brown potatoes (such as Simply Potatoes)
- 2 tablespoons shredded zucchini, patted dry with paper towels
- 1 teaspoon chopped fresh flat-leaf parsley
- 1/2 teaspoon chopped fresh chives
- For each Beet-Potato Egg Basket, start with:
- 2 tablespoons refrigerated shredded hash brown potatoes (such as Simply Potatoes)
- 2 tablespoons shredded red beet

- 1 1 1 teaspoon vanilla extract
- 1 1 1 egg
- 1 1 1 egg white
- 1/2 1/2 1/2 cup powdered sugar
- 2 2 2 Tablespoons milk
- 1/2 1/2 1/2 teaspoon vanilla extract

Chipotle Chicken Fajitas

Place chicken in a bowl, add chipotle, and salt and toss until meat is well coated
- 1 pound (about 6) boneless, skinless chicken thighs, cut lengthwise into strips about 1-inch wide
- 1 chipotle en adobo, minced (about 1 tablespoon)
- 2 teaspoons kosher salt
- 1 tablespoon vegetable oil
- 1 medium red onion, quartered and sliced crosswise 1/2-inch thick
- 3 medium cloves garlic, thinly sliced (about 2 tablespoons)
- 2 medium bell peppers, stemmed, seeded, quartered lengthwise, and sliced into 1/2-inch strips
- 1/2 cup low-sodium chicken broth or water
- 2 teaspoons roughly chopped fresh oregano
- 6 to 8 flour tortillas, warmed, for serving
- Pico de Gallo salsa, optional for serving
- Guacamole, optional for serving
- Sour cream, optional for serving
