Hasselback Potatoes

With pencils or chopsticks on either side of potato, slice each potato width-wise down to the pencil--being careful...
- 4 medium sized russet potatoes, washed
- 1/4 cup melted butter
- 2 teaspoons finely chopped garlic
- 8 (3/4 oz.) slices sharp cheddar cut into 6 pieces
- 2 Tablespoons finely chopped chive
- Salt and pepper, if desired
Maple Pecan Oatmeal Bar Cookies

Heat oven to 350 degrees. Lightly spray a 9 x 13" baking dish with Pam
- For topping:
- 2 1/4 cups oats
- 2 cups flour
- 1 1/2 cups firmly packed brown sugar
- 3/4 cup shredded coconut
- 1 teaspoon baking soda
- 1 teaspoon salt
- 12 Tablespoons (1 1/2 sticks) butter or margarine, melted
- 1/3 cup maple syrup
- 1 egg, lightly beaten
- 1 teaspoon vanilla
- 1 1/2 cups chopped pecans
- 1/4 cup firmly packed brown sugar
- 1/3 cup maple syrup
Cranberry Honey

- 3- 16 oz. cans whole berry cranberry sauce
- 12 oz. jar orange marmalade
- 1 1/2 cups honey
Homemade Bailey's Irish Cream (Mom's)

- 1 3/4 cup Irish whiskey
- 1 can (14 oz.) condensed milk
- 1 cup (1/2 pint) whipping cream
- 4 eggs
- 2 Tablespoons Hershey's chocolate syrup
- 2 teaspoons instant coffee
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract
Sour Cream Dressing for Cucumbers

- 2 Tablespoons white vinegar
- 1/2 teaspoon mustard
- 1 Tablespoon minced onion
- 1/4 teaspoon granulated sugar
- 1/4 teaspoon salt

Jam-Filled Ricotta Pancakes

- Requires a "filled pancake pan" ( Williams Sonoma)
- 1 3/4 cup flour
- 3/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 Tablespoons granulated sugar
- 1/2 teaspoon salt
- zest of 1/2 lemon
- 3 egg yolks
- 1 1/3 cups buttermilk
- 3/4 cup ricotta cheese
- 5 egg whites, beaten to stiff peaks
- 2 1/2 Tablespoons unsalted butter, melted
- 7 Tablespoons jam, or as needed
- Confectioners sugar for garnish
Fruit Smoothie

Throw ingredients for each smoothie in blender and whip
- Raspberry-Watermelon:
- 2 cups seeded watermelon chunks
- 1/2 pint raspberries
- 1 cup ice cubes
- 2 Tablespoons sugar
- OR
- Banana-Blueberry:
- 1/2 pint blueberries, rinsed
- 1 large ripe banana
- 1 ripe black or red plum, halved, pitted, cut into chunks
- 1/2 cup frozen vanilla yogurt
- 2 cups ice cubes
- 2-4 Tablespoons sugar
- OR
- Mango-Orange:
- 1 ripe mango, peeled, pitted and cut into chunks
- 1 cup each orange juice and low-fat vanilla ice cream or yogurt
- 1/2 teaspoon vanilla
- OR
- Honeydew-Kiwi:
- 2 cups seeded ripe honeydew melon chunks
- 1 Granny Smith apple, cored and cut into chunks
- 1 kiwi fruit, peeled and cut into chunks
- 1 cup ice cubes
- 3-4 Tablespoons sugar
- 1 Tablespoon fresh lime juice
- OR
- Pineapple-Berry:
- 2 cups fresh pineapple chunks
- 1 ripe medium banana, peeled and cut into chunks
- 4 large strawberries, hulled
- 1/2 cup sweetened cream of coconut
- 1 Tablespoon fresh lime juice
- 1 cup ice cubes

Cheesy Chicken and Rice Bake

- 3/4 cup uncooked rice
- 1 can cream of chicken soup
- 1 cup water
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
