Lemon Pound Cake (Barefoot Contessa)

THIS MAKES TWO LOAVES! VERY LEMONY!
- 1/2 pound unsalted butter
- 2 1/2 cups granulated sugar
- 4 large eggs (at room temp)
- 1/3 cup grated lemon zest (6-8 large lemons)
- 3 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 3/4 cup freshly squeezed lemon juice
- 3/4 cup buttermilk at room temp. (make with 1T.lemon juice + milk)
- 1 teaspoon vanilla extract
Brown Sugared Carrots

I love using carrots with tops, if available
- 2 tablespoons extra-virgin olive oil
- 1 to 1 1/2 pounds carrots, all a similar size and thickness, peeled and quartered lengthwise, tops reserved for garnish
- Kosher salt and freshly ground black pepper
- 2 tablespoons dark brown sugar
- 1 tablespoon molasses
- 1/2 to 1 cup water
- 2 tablespoons butter
- 1 sprig rosemary

- 2 cups all-purpose flour

- 1/4 teaspoon salt
- 2 sticks (1 cup) butter
- 4 heaping tablespoons cocoa
- 1/2 cup buttermilk OR (mostly whole milk and a little white vinegar)

German Potato Salad (Louise Braem's)

Boil potatoes until tender; peel and slice while hot
- 5 lbs. potatoes, boiled in jackets until tender.
- 1/2 lb. bacon
- 1 medium onion
- 1/3 cup sugar
- 3 teaspoons flour
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 teaspoon dry mustard
- 3/4 cup vinegar
- 3/4 cup water
- 1/2 teaspoon celery seeds

- 1 1/2 cups soft shortening
- 2 cups sugar
- 2 unbeaten eggs
- 1/4 cup cream

Warm Blueberry Brie

Preheat oven to 375 degrees
- 1 wheel of Brie
- 2/3 cup fresh blueberries
- 1 Tablespoon lemon juice
- 1/2 teaspoon cinnamon

- 10 sheets phyllo dough

Melt the butter in a 9 x 13 pan
- 1/2 cup butter
- 17 oz. can whole corn and liquid
- 17 oz. can creamed corn
- 8 1/2 ounce box jiffy corn bread mix
- 2 slightly beaten eggs
- 1 cup sour cream
- Salt and pepper
- 1 cup shredded cheddar

Prepare ganache first. Melt chocolate, cream and butter together in a double boiler

- 1 3/4 pound semi sweet chocolate
- 1 pound butter
- 1 Tablespoon vanilla
- 12 eggs, separated
- 6 oz. flour, sifted
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 pound sugar
- 1/2 pound semi sweet chocolate
- 3/4 cup heavy cream
- 1/4 cup butter
Peanut Butter Chocolate Pie

- 1 1/2 cups cold half-and-half, light cream or milk
- 1 pkg.(4 serving size) instant chocolate pudding mix
- 3 1/3 cups Cool whip, thawed
- 1 cup chopped Reese's peanut butter cups
- 1 chocolate crumb pie crust (use frozen Café Pie recipe)
