Italian Cheesecake (Amy's)

1. Preheat oven to 475 degrees
- 6 eggs, beaten
- 1 cup sugar
- 1/2 cup flour
- 3 Tablespoons rum
- 1/2 teaspoon orange extract
- 1 teaspoon vanilla extract
- 3 Tablespoons sour cream
- 3 lbs. ricotta cheese
Iced Pumpkin Spice Cake

1. Preheat oven to 350 degrees
- 3 cups flour
- 4 teaspoons pumpkin pie spice
- 2 teaspoons baking powder
- 1 cup (2 sticks) butter or margarine, softened
- 2 cups firmly packed brown sugar
- 4 eggs
- 1 can (15 oz.) solid pack pumpkin
- 1 1/2 cups raisins
- 1 1/2 cups powdered sugar
- 2 Tablespoons water
- 1 cup chopped walnuts
- Whipped topping
Sausage Casserole

1. Brown the sausage and onion in a skillet along with the olive oil
- 2 tsp. olive oil
- 1 lb. sausage
- 1/2 onion, diced
- 4 cups rotini, cooked
- 1 can stewed tomatoes (juice included)
- 1 lb. ricotta
- 1/4 cup milk
- basil
- salt
- pepper
Tuna Noodle Casserole (Seth's Favorite)

YIELDS 4 SERVINGS (OR LESS!)
- CHEESE SAUCE:
- 1 can (7 oz.) tuna, drained
- 2 cups cooked noodles
- frozen peas (I'm going to add these in, but I don't currently)
- 2 cups cheese sauce (see recipe below)
- 4 Tablespoons butter
- 4 Tablespoons flour
- 2 cup cold milk
- salt
- pepper
- 3/4 cup Velveeta cheese, chunked
Fresh Peach Parfait

1. Have ready a large bowl half filled with cold water and several ice cubes
- 6 large firm-ripe peaches
- 1 Tablespoon lemon juice
- 2 Tablespoons unsalted butter
- 1/3 cup packed light brown sugar
- 1/4 cup dark rum
- 1/2 teaspoon cinnamon
- 2 pints vanilla ice cream
- 1/2 cup chopped toasted walnuts
- Mint sprigs for garnish (optional)
Chunky Apple Cake (Carol's)

In a large bowl, cream the butter, sugar and vanilla
- Butterscotch Sauce:
- 1/2 cup butter, softened
- 2 cups sugar
- 1/2 teaspoon vanilla
- 2 eggs
- 2 cups flour
- 1 1/2 teaspoons cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 6 cups chopped peeled tart apples

- 1/2 cup packed brown sugar

1. Cook pasta according to package instructions
- Topping:
- 12 oz. uncooked penne pasta
- 13 bacon strips
- 1 1/2 pound boneless skinless chicken breasts, cut into 1" cubes
- 3 Tablespoons butter
- 6 green onions, chopped
- 3 Tablespoons flour
- 4 cups milk
- 3 cups shredded cheddar cheese
- 1 1/2 cups shredded Swiss cheese
- 1 1/2 cups frozen peas, thawed
- 3/4 teaspoon pepper
- 1/2 teaspoon dried thyme
- 3/4 cup dry bread crumbs
- 2 Tablespoons butter, melted
Cioppino

Heat oil in deep, heavy skillet
- 1/4 cup olive oil
- 2 cloves garlic, cooked
- 2 medium onions, chopped
- 2 green peppers, seeded and chopped
- 1 can (1 pound) tomatoes
- 1 can (8 oz) tomato sauce
- 2 cups dry white wine
- 1 bay leaf
- 1/8 teaspoon oregano
- salt and pepper to taste
- 1 1/2 pounds cod or tile fish, cut into chunks
- 1 pound shrimp
- 1 pound scallops
- 3/4 pound mussels (with shells)
