Hot Broccoli Dip

Cook the broccoli. Drain thoroughly
- 8 ounces creamed cheese
- 8 ounces sour cream
- 1 envelope Italian dressing mix (Good Seasons)
- 10 ounces broccoli (frozen package)
- 2 cups shredded cheddar
Panzanella Salad

1. Preheat oven to 375 degrees
- 1 stale baguette, cut into bite-sized cubes
- 1/3 cup plus 2 Tablespoons extra virgin olive oil
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 clove garlic
- 3 Tablespoon balsamic vinegar
- 3 Tablespoons drained capers, chopped
- 1 1/2 pounds tomatoes, cut into 1" pieces
- 1 small red onion
- 1 pound fresh mozzarella, cut into 1" chunks
- 1/2 cup chopped basil
Asparagus Strata

Steam asparagus until just tender, 3-4 minutes
- 1 pound asparagus, tough ends snapped off, cut into 1" lengths (3 cups)
- 2 teaspoons olive oil
- 3 oz (4 slices) Canadian bacon, diced
- 1 large onion, chopped
- 5 large eggs
- 1 Tablespoon Dijon mustard
- 1/4 teaspoon salt
- Freshly ground pepper to taste
- 2 cups milk
- 4 cups cubed whole-wheat bread (4 slices, crusts removed)
- 1 cup grated Swiss or Cheddar cheese
Brown Sugar Substitute

Mix ingredients well. Replaces 1 cup of regular brown sugar to be used when baking

- 1/4 cup sugar-free maple syrup
Strawberry Muffins

In a bowl, combine flour, 1/2 cup sugar, baking powder, 1 teaspoon cinnamon and salt
- Topping:
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 egg, beaten
- 2/3 cup buttermilk
- 1/4 cup butter or margarine, melted
- 1/2 cup finely chopped fresh or frozen rhubarb, thawed and drained
- 1/4 cup strawberry preserves
- 1 Tablespoon sugar
- 1/4 teaspoon cinnamon
Bacon Crisps (Carol's)

- 2 cups shredded Velveeta
- 1/2 cup Italian dressing
- 12 slices bacon
- 2 Tablespoon Worcestershire sauce

- STREUSEL TOPPING:
- 1 cup oil
- 3 eggs
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla
- 4 cups sliced apples
- 3 cups flour
- 2 teaspoons cinnamon
- 1 cup chopped nuts
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2/3 cup flour
- 4 Tablespoons sugar
- 4 Tablespoons brown sugar
- 6 Tablespoons butter
- 1 teaspoon cinnamon
Butter Pecan Banana Cake

Blend all ingredients in a large mixer bowl
- Glaze:
- 1/2 cup mashed bananas
- 1 pkg. yellow cake mix
- 1 pkg. (4 serving size) butter pecan instant pudding
- 4 eggs
- 1 cup water
- 1/4 cup oil
- 1/2 cup finely chopped nuts
- 1 cup XXX sugar
- 1 Tablespoon hot milk or water
Bacardi Rum Cake

Preheat oven to 325 degrees
- Glaze:
- 1 cup chopped pecans or walnuts
- 1 yellow cake mix
- 1 pkg. (3 3/4 oz) instant vanilla pudding mix
- 4 eggs
- 1/2 cup cold water
- 1/2 cup vegetable oil
- 1/2 cup dark rum
- 1/4 pound butter
- 1/4 cup water
- 1 cup granulated sugar
- 1/2 cup dark rum
Marge Harper's Holiday Cheese Ball

Mix all ingredients (except nuts) into a ball, then roll in the Walnuts
- 2 - 8 oz.Cream Cheese, softened
- 1 Crushed Pineapple, drained
- 2 Tbsp. Green Pepper, diced
- 2 Tbsp. Onion, diced
- 2 cups Walnuts (or Pecans), diced
