Cream of Chicken Soup

LET THIS STAND (IN FRIDGE) OVERNIGHT TO LET FLAVORS BLEND
- 1/2 cup unsalted butter
- 1 medium Spanish onion
- 2 stalks celery (with leaves) chopped
- 3 medium carrots, chopped
- 1/2 cup plus 1 Tablespoon flour
- 7 cups chicken broth
- 3 sprigs parsley
- 3 sprigs fresh thyme
- 1 bay leaf
- 2 3/4 cup cooked, diced chicken
- 1/2 cup heavy cream (I substituted with 1 cup milk)
- 2 1/2 teaspoons dry sherry
- 1 Tablespoon kosher salt
- Freshly ground black pepper
Tomatoes Florentine

Cut tops off tomatoes, and scoop out insides
- 12 plum tomatoes
- 1 cup seasoned breadcrumbs
- 2 oz Swiss cheese, grated
- 1 pkg. frozen, chopped spinach--thawed and drained
- 4 Tablespoon butter, melted
Marvelous Chicken Pot Pie (Mom's)

This is so easy--and so good! First, zap the potatoes til cooked
- 1/3 cup butter
- 1 onion, diced
- 1/3 cup flour
- 2 celery ribs, sliced
- 1 3/4 cup chicken boullion
- 2/3 cup milk
- 2 cups diced chicken
- 2 medium potatoes
- 2 carrots
- 1 cup frozen peas
Quick Chicken Parmesan

Place chicken in a baking dish
- 4 half chicken breasts, skinned and boned
- 2 cans (14.5 oz each) stewed tomatoes
- 2 Tablespoons cornstarch
- 1/2 teaspoon oregano or basil, crushed
- 1/4 cup Parmesan cheese, grated
Hot Fudge Cake

In a medium bowl, combine flour, sugar, 2 tablespoons cocoa, baking powder and salt
- 1 cup flour
- 3/4 cup sugar
- 6 Tablespoons baking cocoa, divided
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 2 Tablespoons vegetable oil
- 1 teaspoon vanilla
- 1 cup packed brown sugar
- 1 3/4 cup hot water
- Whipped cream, or ice cream to top.
Quiche Cups

Good for brunch, or lunch with salad or bowl of soup!
- 1 package frozen French toast (9 oz, 6 slices)
- 3 slices (1 oz each) cooked ham, cut in thin strips
- 1 1/2 cups frozen spinach and onion quiche filling, thawed
- Use: 6 oz custard cups

- 1 cup granulated sugar
- 1/3 cup light corn syrup
- 1/4 cup water
- 1 Tablespoon butter

- 1 1/2 cups pecan halves or pieces
Easter Peeps Sunflower Cake

- 1 package yellow cake mix (regular size)
- 2 cans (16 ounces each) chocolate frosting
- 19 to 20 yellow chick Peeps candies

Orange Pineapple Torte Cake

In a mixing bowl, combine cake mix, one package of pudding mix, egg whites, water, oil and baking soda
- 1 pkg. yellow cake mix
- 2 pkgs. (1 oz. each) instant sugar-free vanilla pudding mix, divided
- 4 egg whites
- 1 cup water
- 1/4 cup vegetable oil
- 1/4 teaspoon baking soda
- 1 cup cold skimmed milk
- 1 carton (8 oz.) frozen light whipped topping, thawed
- 1 can (20 oz.) unsweetened crushed pineapple, well drained
- 1 can (11 oz.) mandarin oranges, drained, divided
- Fresh mint for decoration
Chocolate Chip Cookies (Karen Mitchell)

- 1 cup lard
- 1 box brown sugar
- 4 eggs
- 4 cups flour
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup milk
- Dash of salt
- 1/2 bag chocolate chips (or more)
