Black Bean Taco Soup (slow cooker)

Brown meat and onion, drain
- 1 lb lean ground beef (or ground turkey works too!)
- 1 medium onion, chopped
- 1 package mild taco seasoning mix
- 1 (16 oz) bag frozen corn
- 1 (16 oz) can black beans drained and rinsed (you could use kidney beans or pinto beans)
- 2 (14 oz) cans stewed tomatoes
- 1 (8 oz) can tomato sauce
- 1 (4 oz) can diced green chilis

Instructions Start by soaking the black-eyed peas overnight in the slow cooker
- Slow Cooker Size:
- 1 lb. black-eyed peas
- 1 (32-oz.) box chicken broth
- 1 (14-oz) can petite diced tomatoes
- 6 slices bacon, cooked and sliced
- 1 cup diced ham
- ½ cup diced sweet onion
- 1 garlic clove, minced
- 1 tsp. oregano
- ¼ tsp. pepper
- about ¼ tsp. salt (add to taste at the END of cooking time)
- 6 -quart or larger

- FRUIT MIXTURE:
- 6 Tbs Tapioca
- 6-7 cups fresh peaches
- 1 cup sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg

- COBBLER DOUGH:
- 1/2 cup sugar
- 2 cups flour
- 1 1/2 cup milk
- 2 tsp baking powder
- 1 tsp salt
- ~~~~~~~~~~~~~~
- COBBLER TOPPING:
- 1 1/2 cups sugar
- 2 Tbs cornstarch
- cinnamon nutmeg
- 1/2 cup boiling water
RED POTATOES AND GREEN BEANS

12 oz new potatoes, quartered 2 strips bacon `````````````````````` ½ cup chopped onion 2 Tbs
- 12 oz new potatoes, quartered

- 2 Tbs. vinegar
- 2 Tbs Splenda Granulated
- 3/4 tsp thyme
- 1/8 tsp salt

- 3/4 tsp cornstarch
- 1/3 cup water

- can green beans
- 1/4 tsp salt
- Fill large pot with water and bring to boil
- Boil potatoes 20 min. or till tender
- Cook bacon over high heat
- Remove bacon
- Set aside
- Add onion and cook to translucent
- Add next ingredients
- Stir low heat

- Bowl
- Desolve cornstarch in water
- Add to pan and cook 1-2 minutes
- To thicken
- Combine potatoes and beans
- Sprinkle with salt
- Toss
- Pour sauce over all and
- Sprinkle top with crumbled bacon
