Perfect Asian Rice

- 1 cup of short-grain rice
- 1 1/2 cups of water
Revbensspjäll med go chu jang

Chilipastan go chu jang inspirerade till den här asiatiska bastarden
- Basmarinad:
- 1 1/2 kg tunna revbensspjäll i två stora bitar
- 3/4 dl ketchup
- 1/2 dl ljus soja
- 1 msk mörk soja
- 1 msk rött portvin, madeira eller allra helst Pedro Ximenes-sherry
- 1 msk finriven ingefära
- Vuxentillägg (till halva satsen):
- 1 msk rött portvin ….
- 2 msk go chu jang eller annan het chilipasta
- 1 klyfta vitlök
- 1/2 msk ingefära
- Till servering:
- Ris eller friterad potatis
- Dippsås (recept på väg)
- Ångad savoykål (recept på väg)
- Ärtor eller sockerärtor
Roasted Brussels Sprouts and Shallots with Balsamic Vinegar

Look for sprouts about 1 1/2-inches in diameter with tight heads
- 3 pounds brussels sprouts, bottoms trimmed, outer leaves removed, split in half
- 8 medium shallots, sliced thinly
- 1/4 cup extra virgin olive oil
- Kosher salt and freshly ground black pepper
- 2 tablespoons balsamic vinegar

- 50 g coarse salt
- 450 g soft brown sugar
- 600 ml cider vinegar
- 1 tbsp whole mustard seeds
- a large handful of fresh dill
