Avocado Mayonnaise

- 3 egg yolks
- 2 teaspoons kosher salt
- 1 teaspoon Dijon mustard
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 2 avocados, ripe
- 2 tablespoons lime juice
- 2 tablespoons white vinegar
- 3/4 cup canola oil
- 1/4 cup sliced green onions, paper thin
- 1 tablespoon chopped cilantro
Samosa Potato Salad

- 2 Pounds White New Potatoes
- 1 Bay Leaf
- 1/3 Cup Olive Oil
- 2 – 3 Large Shallots, Chopped (About 1 Cup)
- 4 Cloves Garlic, Finely Minced
- 1 Inch Fresh Ginger, Peeled and Grated
- 2 Teaspoons Garam Masala
- 1/2 Teaspoon Ground Coriander
- 1/2 Teaspoon Turmeric
- 1 Teaspoon Ground Cumin
- 1 Tablespoon Fresh Lemon Juice
- 1 1/2 Cups Frozen Peas
- Salt and Pepper
- Fresh Chives (Optional)
Kardemummakaka med äpple

På begäran kommer här recept på den fantastiska kakan
- Att lägga ovanpå:
- 100 g smör
- 2 ägg
- 1 dl strösocker
- 1 dl ljust muscavadosocker
- 1 tsk kardemummakärnor
- rivet skal av 1 citron
- 1 tsk vaniljsocker
- 2 dl vetemjöl, fullkorn
- 1 äpple
- 2 msk råsocker
- 1 tsk kardemummakärnor
- ev. 2 msk (30 g) smör
Asiatisk plommonsås

Har du plommon kvar? Fint! Då är det hög tid att laga en kinesisk plommonsås
- 1 kg blå plommon, gärna lite sura
- 4 klyftor vitlök
- 50 g ingefära (ca 1 dl finhackad)
- 2 msk olja
- 3/4 dl ljus soja
- 3 dl farinsocker
- 3 stjärnanis
- 2 kanelstänger
- 1/2 msk brunt eller svart senapsfrö
- 1 tsk torkad krossad chili (chiliflingor)
- (1/2 tsk sichuanpeppar)
- 1-3 tsk äppelcidervinäger
- 1-2 tsk mörk sesamolja (undvik Blue Dragon, den smakar bränt gummi)
Bacon and pear salad with Stilton dressing

First make the dressing by combining all dressing ingredients in a bowl
- salad:
- 2 pears, cored and thinly sliced
- 1 large handful of fresh chervil, chopped
- 1 large handful of flatleaf parsley, chopped
- 1 large handful of fresh dill, chopped
- 1 large handful of fresh chives, chopped
- 1 package (around 180-200 gram) of streaky bacon
- dressing:
- 4 tbsp white wine vinegar
- 5 tsp Dijon mustard
- 100-150 ml olive oil
- 100 gram Stilton cheese, crumbled
- Maldon sea salt
- freshly ground black pepper
Guacamole

1 Cut avocados in half. Remove seed
- 2 ripe avocados
- 1/2 red onion, minced (about 1/2 cup)
- 1-2 serrano chiles, stems and seeds removed, minced
- 2 tablespoons cilantro leaves, finely chopped
- 1 tablespoon of fresh lime or lemon juice
- 1/2 teaspoon coarse salt
- A dash of freshly grated black pepper
- 1/2 ripe tomato, seeds and pulp removed, chopped
- Garnish with red radishes or jicama. Serve with tortilla chips.
Halloumi skewers with courgette and mushroom

Cut the halloumi into 40 cubes and slice the courgette into 40 slices
- MARINADE:
- 750 g halloumi cheese
- 500 g baby courgettes
- 40 small chestnut mushrooms
- 20 bay leaves
- 20 small skewers (soaked in water if wooden)
- 4 tbsp Japanese soy
- 2 tbsp honey mustard
- 3 garlic cloves, crushed
- 100 ml chopped parsley
- 4 tbsp olive oil
Fläskkarré med hoisinsås

Gå och köp en riktigt bra hoisinsås på en asiatisk butik
- 1 kg fläskkarré
- 1 1/2 dl hoisinsås
Thaiinspirerad sallad med kål och mango

Numera finns det sällan färska limeblad, men försök få tag på frysta
- 4 dl finstrimlad färsk vitkål
- 1 liten gurka
- 2 halvmogna mango eller syrliga äpplen
- 2 tsk farinsocker
- 2-3 msk pressad lime
- 1 1/2 msk fisksås
- 6 finstrimlade limeblad (eller finrivet skal från en lime)
- 1/2-1 tsk krossad torkad chili
- 4 tunt skivade salladslökar
- 2 dl grovhackade asiatiska örter: koriander, mynta, thaibasilika, citronmeliss
- 2 msk finhackade rostade jordnötter
- ev 1 tsk malt rostat ris
Mezze: köfte, haydari and pork skewers

Haydari is a thick yoghurt dip with crushed walnuts and dill
- Lemon, honey and fennel pork skewers:
- 1 kg piece of boneless female pork belly, cut into 2cm pieces
- 125 g honey
- 2 lemons, juice only
- 2 tsp crushed fennel seeds
- 12 vine leaves in brine, drained, halved
- Haydari :
- 500 g sheep’s milk yoghurt
- 1/3 cup finely chopped dill
- 55 g (1/3 cup) finely chopped walnuts
- 1 tbsp finely chopped mint
- 1 tbsp lemon juice
- 1 garlic clove, finely chopped
- Köfte:
- 400 g each finely minced lean beef and lean lamb
- 75 g fine fresh breadcrumbs
- 1/2 cup finely chopped mint
- 3 garlic cloves, finely chopped
- 2 tbsp dried oregano
- 1 tsp each ground cumin and ground coriander
- Large pinch chilli powder
- Cucumber salad:
- 2 tbsp caramelised red wine vinegar (see note)
- 2 tbsp extra-virgin olive oil
- 1 tbsp honey
- 2 Lebanese cucumber, peeled
- 1/4 cup each (firmly packed) chervil, dill and flat-leaf parsley, finely chopped
