Kyckling- och baconpaj i långpanna

- Fyllning:
- 200 g smör
- 200 g valnötter
- 6 dl vetemjöl
- 0.5 dl kallt vatten
- 2 paket skivad bacon
- 6 st kycklingbröst
- 1 st medelstor purjolök
- 4 st vitlöksklyftor

- 7 st ägg
- 7 dl gräddmjölk (går att byta ut mot matlagningsgrädde om så önskas)

Matjestårta

1. Kantskär brödet, lägg fyra skivor som botten + 2 halvor
- Fyllning:
- 675 g AXA fullkornsbröd, 15 skivor
- 4 st hårdkokta ägg
- 1 st finhackad röd lök
- 5 cm purjolök
- 200 g cream cheese
- 4 dl creme fraiche
- 1 dl kaviar
- salt och peppar
- Garnityr:
- 2 brk matjessill á 200 g
- körvel el. annat grönt

Lamb chops with cumin, purple-sprouting broccoli and walnut yoghurt

Stirring the honey and vinegar into the stock imparts a hint of sweet and sour throughout the dish
- 4 lamb loin chops
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1 tsp sea salt
- 150 g purple sprouting broccoli, trimmed and any thick stalks halved lengthways
- Top half of a small butternut squash
- 1 red onion
- 30 g walnuts, shelled
- 1/2 chicken stock cube, mixed with
- 1 l boiling water, 1 tbsp honey and
- 1 tbsp red wine vinegar
- 3 tbsp Greek yoghurt
- A few mint leaves (optional)
- Olive oil
- Salt and pepper

- For the dry rub:
- A leg of mutton, around 2 kg (serves 8)
- 3 cloves garlic
- 1 walnut-sized piece fresh ginger
- 1 teaspoon salt
- 1 teaspoon turmeric
- 1 Cinnamon stick, about 3 cm long
- 1/2 teaspoon cardamom seeds
- 1/2 teaspoon cayenne
- 1/4 teaspoon cloves
- 1/2 a lemon
- For the wet marinade:
- 1/2 teaspoon saffron threads
- 250 g yoghurt
- 100 g blanched almonds
- 100 g blanched pistachios
- To finish:
- 3 tablespoons honey
- For the rice:
- 1 kg long grain or basmati rice
- Another healthy pinch of saffron
- A pomegranate
- 50 g pistachios
- A small bunch of fresh coriander
Mandelbröd

Smält smöret. Blanda med mald mandel, ägg, grädde och salt
- 1 1/2 dl mald Mandel/Mandelmjöl
- 2 Ekologiska Ägg
- 50 gr Smör
- 2 msk Grädde
- 2 msk Psylliumfrön
- 2 msk Pofiber
- 1 tsk Bakpulver
- 1/2 tsk Havssalt
Cauliflower Cheese

In a big saucepan boil the cauliflower florets for about 10 minutes until just soft, drain and set aside
- 1 large cauliflower, trimmed and broken into florets
- 250 ml whole milk
- 200 g grated Gruyère cheese
- 250 g chestnut mushrooms, sliced fine
- 2 tbsp olive oil and 50g butter
- 2 tbps plain flour
- tsp English mustard powder
- A sprinkling of nutmeg
- 50 g ciabatta breadcrumbs
- 50 g finely grated Parmesan cheese

Vispa äggen fluffiga. Blanda fiberhusk och bakpulver i en liten skål och vispa ner i äggen

- 1 slab of Feta cheese
- a small bunch of fresh parsley, chopped
- approx. 1/3 cup extra virgin olive oil

Easter glazed ham

- For the cure:
- 1 half-leg free-range pork (4-5 kg), on or off the bone
- 2 kg salt
- 10 g saltpetre (optional, but it helps keep the ham pink)
- 1 litre good apple juice
- 1 litre strong cider
- 6 litres water
- 1 kg demerara sugar
- 1 kg dark muscovado sugar or black treacle
- 20-30 juniper berries
- 30 g black peppercorns, crushed
- 10 bay leaves, crushed
- 10 cloves
- To cook the ham:
- 1 large onion, peeled and chopped
- 2 large carrots, peeled and chopped
- 2 celery sticks, chopped
- 10 black peppercorns
- 3-4 bay leaves
- 5-6 sprigs fresh thyme
- 1 small bunch parsley stalks
- For the glaze:
- 1 generous tbsp English mustard
