Ooey Gooey Peanut Butter Stuffed Chocolate Cupcakes

- 2 tbsp creamy peanut butter
- 2 tbsp light cream cheese, room temperature
- 2 tbsp granulated no-calorie sweetener (I use Splenda)
- 1/3 cup light whipped topping, thawed

These are great but you really have to watch them while they're cooking
- 1 cup all-purpose flour
- 1 tbsp sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 2 egg yolks
- 2 egg whites
- Oil for greasing pan
- powdered sugar for dusting
- preserves for filling

Preheat the oven to 325°
- 1 1/4 cups cake flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 2 sticks unsalted butter
- 1/2 cup whole milk
- 6 large eggs, separated
- 1 cup sugar
- Pinch of salt
- 1 1/2 cups heavy cream
- 1 1/2 pounds milk chocolate, finely chopped
- Shaved milk chocolate, for garnish (optional)
