- For the crust:
- 3 cups (16 1/2 oz.) bread flour
- 2 tsp. sugar
- 1/2 tsp. instant yeast
- 1 1/3 cups ice water
- 1 tbsp. vegetable oil
- 1 1/2 tsp. salt
- For the sauce:
- 1 (28 oz.) can whole peeled tomatoes, drained
- 1 tbsp. extra-virgin olive oil
- 1 tsp. red wine vinegar
- 2 cloves garlic, minced or pressed
- 1 tsp. salt
- 1 tsp. oregano
- 1/4 tsp. ground black pepper
- For topping:
- Olive oil, for brushing
- 1/2 cup (1 oz.) finely grated Parmesan cheese
- 2 cups (8 oz.) shredded whole-milk mozzarella

- 1 10 oz. jar seedless blackberry preserves (1 cup)

- 3 tablespoons Gochujang
- 1/4 cup red wine vinegar

- 5 tablespoons butter
- 1/4 cup minced shallot

- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1 pinch white pepper
- 1/3 cup Chardonnay wine
- 1 tablespoon lemon juice
