Stewed Chicken, Sausage And Ham

Lightly season the chicken with salt and pepper
- 1 (3-lb.) chicken, cut into 8 serving pieces and patted dry
- salt, freshly ground black pepper
- 1/2 c. all-purpose flour
- 2 tsp. *Drier's* seasoning
- 1/4 c. bacon fat, or vegetable oil
- 1 lb. *Drier's* summer sausage, sliced
- 2 c. thinly sliced yellow onions
- 1/2 c. chopped celery
- 1/2 c. chopped green bell peppers
- 1/2 lb. *Drier's* ham, chopped
- 2 tbsp. minced garlic
- 6 c. chicken stock
- 2 bay leaves
- 1/4 c. chopped green onions
- steamed white rice, eccompaniment
- 1/4 c. chopped fresh parsley
Chicken, Ham And Smoked Sausage Gumbo

In a large pot or Dutch oven, heat the oil over medium heat and stir in the flour
- 1 c. vegetable oil
- 1 c. all-purpose flour
- 1 1/2 c. chopped yellow onions
- 1 c. chopped celery
- 1 c. chopped green bell peppers
- 1 lb. *Drier's* polish sausage, cut crosswise into 1/2-inch slices
- 1/2 lb. *Drier's* smoked ham, cut into small cubes
- 1 1/2 tsp. salt
- 1/4 tsp. cayenne
- 1/4 tsp. freshly ground black pepper
- 3 bay leaves
- 3 qt. chicken stock, recipe follows
- 3 c. cooked chicken meat removed from carcass, recipe below
- 2 tbsp. chopped parsley
- 1/2 c. chopped green onions
- file powder, accompaniment hot sauce, optional
- 4 c. cooked long-grain white rice, accompaniment

- 1/2 c. onion chopped
- 2 cloves garlic, minced
- 1 28 can whole tomatoes, undrained cut in half
- 1 17 oz. can whole kernel corn, undrained
- 1 16 oz. can sliced potatoes, undrained
- 1 10 oz. can chicken broth
- 1 c. water
- 1/4 c. catsup
- 1/4 c. brown sugar
- 1 lb. *Drier's* ham cubed
- 3 c. cabbage, thinly sliced
Glazed Ham Slice

Cut ham slice in half. In a skillet, cook ham in butter for 3-4 minutes on each side or until heated through
- 1 fully cooked *Drier's* ham slice (about 3/4 lb. and 1/2 inch thick)
- 1 tbsp. butler
- 1 can (8 oz.) sliced pineapple
- 1-1/2 tsp. cornstarch
- 2 tbsp. honey
- 1 tbsp. steak sauce
- 1 tbsp. *Drier's* mustard
Almond Cheddar Appetizers

In a bowl, combine mayonnaise and Worcestershire sauce; stir in cheese, onion, almonds and bacon
- 1 c. mayonnaise
- 2 tsp. Worcestershire sauce
- 1 c. (4 oz.) shredded N.Y. sharp cheddar cheese
- 1 medium onion, chopped
- 3/4 c. silvered almonds, chopped
- 6 "Drier's" bacon strips, cooked and crumbled
- 1 loaf (1 lb.) French bread
Pasta Chicken Carbonara with* Drier's* Bacon

Bring a large pot of salted water to a boil for the spaghetti
- wisk together:
- 1/2 c. parmesan, grated
- 2 eggs
- 1/4 c. heavy cream
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/2 lb. *Drier's* bacon thick-sliced diced
- 1 lb. chicken tenders, seasoned with salt and pepper
- 1/4 c. dry white wine
- 1/4 c. chicken broth
- 1 tbsp. fresh lemon juice
- cook drain wit combine
- 12 oz, dry spaghetti
- 1 c. frozen peas
- garnish with:
- bread crumbs.
- 2 slices crusty Italian bread, 1/2 thick, cubed (to make 2 c. crumbs)
- 2 tbsp. olive oil
- 3 tbsp. chopped fresh parsley
- 1 tbsp. lemon zest, minced
- 1 tsp, red pepper flakes salt to taste
Drier's Ham and Asparagus Chowder

1. In medium saucepan, combine potatoes and water
- 1 1/2 C. cubed unpeeled red potatoes
- 1/2 C. water
- 1 1/2 C. cut fresh asparagus spears
- 1 1/2 C. cubed *Drier's* ham
- 1 can condensed cream of mushroom soup
- 1 C. milk
Hot Chicken Salad

Bake almonds in a shallow pan at 350 degrees for 5 to 10 minutes or until toasted
- 1/2 c. slivered almonds
- 4 c. chopped cooked chicken
- 2 c. sliced celery
- 1/4 c. chopped onion
- 1/4 c. chopped pimiento, drained
- 1 (4.5 oz.) jar sliced mushrooms, drained
- 1 (8-oz.), can sliced water chestnuts, drained
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 c. (8 oz.) N.Y.shredded cheddar cheese, divided
- 1 c. mayonnaise
- 1/2 c. sour cream
- 3 tbsp. lemon juice
- 1 c. crushed potato chips
- 1 c. refrigerated shredded. parmesan cheese

- 2/3 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
- 1 1/2 cups N.Y. shredded cheddar cheese

- 3 slices *Drier's*bacon cooked, crumbled
- 1 tablespoon butter or margarine
- 1 tablespoon freshly-grated Parmesan cheese
