Sausage And Lentil Casserole

Preheat the oven to 350 degrees F
- 1 c. (1/2 lb.) green or brown lentils, rinsed
- 2 tsp. salt
- 1 medium onion, cut in half (1 half stuck with 2 cloves; 1 half chopped)
- 1 tsp. fennel seeds
- 1 bay leaf
- 6 sweet Italian sausages (about 1 1/2 lb.)
- 2 tbsp. extra-virgin olive oil
- 2 tbsp. unsalted butter
- 3 oz. slab bacon, diced
- 1 medium carrot, peeled and chopped
- 2 large garlic cloves, finely chopped
- salt and freshly ground black pepper
- 1/2 c. dry white wine

1.Heat oven to 375* 2. Place ham, cut-side down, on a rack in large roasting pan
- 1 fully cooked spiral-cut ham (about 8 pounds)
- 1 cup packed dark-brown sugar
- 1/4 cup orange juice
- 1 cup orange marmalade(12-ouze jar)
- 1/4 cup *Drier's* mustard

- 6 large eggs
- 1/2 c. all-purpose flour

Chicken Scallopini with Three Cheeses

Preheat the oven to 350 degrees F
- 2 tsp. extra-virgin olive oil
- 4 boneless skinless chicken breast halves (about 1 3/4 lb. total)
- salt and freshly ground black pepper
- 2 oz. pecorino or provolone cheese, freshly grated
- 1 oz. fontina thinly sliced
- 6 oz. fresh mozzarella cheese, sliced
- 1 ripe tomato, peeled, seeded, and chopped
- 1/2 tsp. dried oregano
- 1 tbsp. finely chopped fresh basil or parsley

- 1 cup sugar
- 1/3 cup packed golden brown sugar
- 2 tsp instant espresso powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/3 cup water
- 1 Tbsp. dark unsulfured molasses
- 1 1/4 cups (2 1/2 sticks) unsalted butter
